How to Order
1. Before entering (if there is a queue) This popular restaurant is conveniently located in front of Hakata Station, and there can be waits from weekday lunchtime until late at night. Although it operates until midnight (1 AM on Fridays and Saturdays), there can be queues of 10 or more people during peak hours. Please wait according to the instructions of the staff (a team of two, male and female). 2. Purchasing meal tickets / Ordering There is no ticket machine; orders are taken after you are seated. Primarily, customers order via QR code from their smartphones (verbal orders are also possible, but QR is often prioritized during busy times). When ordering ramen, choose your noodle firmness (barikata - very firm, kata - firm, futsu - regular, yawa - soft). Please confirm on-site if an English menu is available. If you are unsure, it is advisable to observe how previous customers order or ask staff if they can assist in English before placing your order. 3. Seating and receiving your order You will be guided by the staff to one of the 7 counter seats or a table. Due to the rich soup that is simmered for over 20 hours, it takes about 10-13 minutes for your order to be served. 4. Other Raw garlic (with crusher), white pepper, and white sesame are available on the table. Karashi takana (spicy pickled mustard greens), beni shoga (red pickled ginger), and water are self-service from a corner near the entrance. Noodle refills (kaedama) are available. You can choose from two types of Tonkotsu: "Rich Tonkotsu" and "Yatai Tonkotsu (light)." Payment is accepted in cash or QR code payment (PayPay, d-Barai); cards and electronic money are not accepted.
