Menya Tyson Hakata Station mae Sogyo
麺屋 たいそん 博多駅前創業店
Overview
This creamy, foamy Hakata Tonkotsu ramen shop is located in front of Hakata Station, Fukuoka, within walking distance from Kushida Shrine-mae Station. The signature "Noko Tonkotsu" (Rich Tonkotsu) features a frothy soup with concentrated bone umami, simmered for over 20 hours, and is renowned for its mild flavor that suppresses the unique smell of tonkotsu. For those who prefer a lighter taste, the "Yatai Tonkotsu" (Stall Tonkotsu) is also available, offering two distinct options. The seared, melt-in-your-mouth chashu is particularly popular, and the shop also offers satisfying sets including chashu rice bowls, half fried rice, and gyoza. The noodles are thin and straight with a high water content, and you can specify your preferred firmness when ordering (e.g., bari-kata (extra firm), kata (firm), futsu (normal), yawa (soft)). You can customize your ramen to your liking with fresh garlic (with press) available on the table, and spicy takana, red ginger, and water from the self-service corner. Orders can be placed via QR code or verbally. Open until midnight (1 AM on Fridays and Saturdays), it's a convenient spot for a late-night ramen (shime-ramen) or a casual meal in the Hakata Station area. The latest information is also available on their official Instagram: https://www.instagram.com/menyatyson_official/
How to Order
1Before entering
Located on the 1st floor of Tamai Shinwa Building, Hakata Ekimae 3-chome, a 7-minute walk (approx. 520m) from Kushida-jinja-mae Station. Opening hours are Mon-Thu & Sun from 11:00 to 0:00 the next day, and Fri-Sat from 11:00 to 1:00 the next day, staying open late into the night. It's a popular spot with queues of about 10 people even around midnight on weekends, and seats are often full on weekdays from 17:00 to 20:00, so it's best to avoid peak times if you want to skip the wait.
2Purchasing meal tickets and ordering
There is no ticket vending machine; you sit down at your table, scan the QR code on the table with your smartphone, and order. Popular items include "Noko Tonkotsu" (Rich Pork Broth) (850 yen), "Yatai Tonkotsu Ramen" (Street Stall Style Pork Broth Ramen) (850 yen), "Tokusei Noko Tonkotsu" (Special Rich Pork Broth), "Nitama-iri Noko Tonkotsu" (Rich Pork Broth with Flavored Egg) (1,050 yen), side dishes like Chashu-don (Roast Pork Rice Bowl) and half fried rice set, and Taison's Gyoza (5 pieces, approx. 300 yen). When ordering, specify noodle hardness from "barikata (very firm) / kata (firm) / futsu (regular) / yawa (soft)". Payments can be made with QR code payments (PayPay, d-barai) and cash; credit cards and electronic money are not accepted.
3Seating and receiving
The seating consists of 7 counter seats and 16 table seats (23 seats total). Staff will guide you to your seat upon entry, and you can get water yourself from the self-service corner on the left side of the entrance. Serving usually takes about 5-10 minutes, with staff relaying QR orders to the kitchen.
4Other
The self-service corner has beni shoga (red pickled ginger) and karashi takana (spicy leaf mustard); take as much as you like to your table. On the table, you'll find white pepper, white sesame, and fresh garlic (with a press). The signature Noko Tonkotsu has a thick soup simmered for over 20 hours; the classic way to enjoy it is to first taste the soup alone, then change the flavor with beni shoga or karashi takana, and add crushed garlic. The chashu (roast pork) is torched for a tender finish; pairing it with half fried rice or gyoza adds to the volume.
