Founded in August 2008, this shop, located past the shopping street from Seibu Shinjuku Line Nogata Station, is a seminal presence in Tokyo's rich miso ramen scene. Many popular ramen shop owners, including Misokko Fuku in Ogikubo, have trained here, making its lineage indispensable when discussing Tokyo's miso ramen landscape. The soup is based on a richly simmered foundation of pork bones, chicken bones, and vegetables, then lard, garlic, and white miso are stir-fried together in a wok, which is their signature method. This bowl, balancing a thick, rich impact with a pleasant aftertaste, may surprise with its richness at first bite but possesses an addictive quality that makes it impossible to stop slurping. The noodles are thick, chewy yellow noodles from Mikawaya Seimen, offering a satisfying bite that stands up to the piping hot soup. The kizami-ninniku (chopped garlic) on the table is free for unlimited refills, and adding a spoonful is a famous way to transform the flavor. In addition to the classic Miso and Karamiso (spicy miso), the menu is wide-ranging, including the spicy Bancho Ramen (Boss Ramen), Kuromiso (black miso), Morimori Yasai Ramen (piled-high vegetable ramen) with plenty of stir-fried vegetables, Miso Tsukemen (miso dipping noodles), Mazesoba (soupless mixed noodles), and even a notably salty Batch Koku Shoyu (rich soy sauce). On Tuesdays, weekly limited-edition noodles are also available. Many regulars pair their ramen with rice dishes like Chahan (fried rice) or Mini Butadon (mini pork rice bowl).

1Before entering the shop
A 4-minute walk through the shopping street from Nogata Station North Exit. Despite being a famous shop, the turnover is quick, so it's often possible to get in with no wait or only a few people even during lunch peak hours. Since it has continuous operation, the afternoon hours are an even better time to aim for. Business hours can vary by day, so it's advisable to check their official X (Twitter) before visiting. Tuesdays are designated as the day for weekly limited-edition noodles.
2Purchasing meal tickets and ordering
Upon entering, first purchase a shokken (meal ticket) from the kenbaiki (ticket vending machine). It's easy to choose with pictures, but payment is cash only. For first-timers, the signature Miso Ramen is recommended as a standard, and from there, there's the enjoyment of exploring Karamiso (spicy miso), Bancho Ramen (Boss Ramen), Kuromiso (black miso), or Morimori Yasai Ramen (piled-high vegetable ramen).
3Seating and receiving your order
There are 6 counter seats and 2 tables, and staff will guide you to your seat. Water is self-service from a pot on the counter. Cooking proceeds 3-4 bowls per batch. Paper aprons are available on the counter, which are reassuring to wear to protect against splashes from the thick noodles.
4Other
Adding kizami-ninniku (chopped garlic) from the table instantly changes the flavor, with a junk food-like umami layering on top of the miso's richness. It's recommended to add it little by little. Ichimi (Japanese chili powder) is also always available. Combining it with rice or a mini butadon (mini pork rice bowl) is a classic choice, and it's also nice that ordering beer comes with negi chashu (green onion and roasted pork) as an appetizer.
