Overview
Mokkosu Sakae-ten is a Kumamoto Ramen shop in Nagoya's Sakae Sumiyoshi area, open until late at night. It's been popular among locals as a late-night ramen spot after midnight, and its signature dish is the unique 'Natto Ramen'. This dish features a tonkotsu (pork bone) based soup combined with carefully whisked and frothed natto (fermented soybeans), creating a surface covered with white foam, similar to an espuma. The stickiness of the natto itself is suppressed, and the tonkotsu soup mellows the natto flavor, making it much easier to eat than its appearance suggests. Large natto beans sink to the bottom, so it's recommended to scoop them up as you eat. They also offer regular ramen with the characteristic roasted garlic aroma of Kumamoto ramen, spicy ramen, and takana (pickled mustard greens) ramen. Popular side dishes include chahan (fried rice), karaage (fried chicken), and juicy gyoza. 1Before entering
This shop operates late at night, open until 3 AM from Sunday to Thursday, and until 5 AM on Fridays and Saturdays. Many people visit late at night as a finishing meal after drinking in Sakae. It's relatively uncrowded late at night, but there might be a line outside on Saturday nights.
2Purchasing meal tickets and ordering
Upon entering, you will be asked about the number of people and assigned a seat. Afterward, purchase your meal ticket from the vending machine on the left side of the entrance. As the vending machine lacks dish photos and English descriptions, it's smoother if you decide on your order beforehand, such as their signature Natto Ramen. You can choose your noodle firmness from "yawame (soft), futsu (regular), katame (firm)", and tell the staff verbally when you hand over your ticket (it will be regular if not specified). Kaedama (extra noodle) costs 150 yen. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and receiving your order
There are only 14 counter seats. Go to your assigned seat and hand your meal ticket to the staff. Natto Ramen takes about 5 minutes to prepare as it involves stirring the natto.
4Other notes
As you eat Natto Ramen, natto accumulates at the bottom of the bowl, so use a spoon to scoop it up to enjoy it until the very end. The shop also offers a good selection of side dishes, including fried rice, fried chicken, and juicy gyoza.
