Mugi no Yoake
麦の夜明け
Overview
Opened in 2022, this new star of the Kyoto ramen scene earned a Bib Gourmand in the Michelin Guide Kyoto-Osaka in less than a year, the youngest ever to achieve this. Quietly nestled in a residential area in Nishishichijo Kakegoshi-cho, Shimogyo-ku, Kyoto City, a 16-18 minute walk from the nearest station, it features white walls, a purple noren curtain, and a modest sign next to it that reads 'Donated by Doshisha University Ramen Research Society 1st Class'. The interior exudes a serene kappo-style atmosphere, a small space with only 9 seats, harmonizing white wood counters and white walls. The two signature chuka-soba dishes are 'Scallop and Sansho Chuka Soba' and 'Beef Soy Sauce and Sansho Chuka Soba'. The 'Scallop and Sansho Chuka Soba' is a delicate bowl featuring a golden-hued white soy sauce-based soup blending Omijidori chicken and Amakusa Daioh chicken, with the concentrated umami of dried scallops and the refreshing aroma of Budo sansho pepper. The 'Beef Soy Sauce and Sansho Chuka Soba' offers a deep flavor woven with the richness of beef, the sweetness of soy sauce, and the stimulating kick of sansho pepper, even hinting at sukiyaki. The noodles are homemade, flat, medium-thin straight noodles made from 'Setokirara' wheat from Yamaguchi Prefecture. They have a smooth texture followed by a fragrant wheat aroma, pairing exceptionally well with the soup. Toppings are meticulously arranged, reminiscent of a kaiseki dish, including two types of chashu (pork shoulder loin and rare duck chashu), rich wantan dumplings, extra-thick menma, a sticky ajitama egg, and Kujo green onions. Seasonal limited-time specials, such as those appearing during Golden Week and New Year's (e.g., Kousaka Chicken Rich Tsukemen, Duck-filled Tsukemen, Kujo Green Onion Aimori Spicy Miso Mazesoba, limited specials with crab miso and Calpis butter), are also highly acclaimed. Monday-only specials like the Duck-filled Mazesoba are announced on Instagram. Side dishes like the scallop takikomi gohan (cooked rice) and charcoal-grilled meat donabe gohan (rice pot) are also of high quality, making it a renowned restaurant where you can enjoy the meal to the very end.

1Before entering
Located in a residential area in Nishishichijo Kakegoshi-cho, Shimogyo-ku, Kyoto City, a 16-19 minute walk from Hankyu Nishikyogoku Station, Saiin Station, JR Nishioji Station, or Tanbaguchi Station. Realistic access is by Kyoto City Bus: approx. 20 minutes from Kyoto Station (Route 205 towards Kinkakuji) or approx. 5 minutes from Hankyu Saiin Station (Route 202), both alighting at 'Nishioji Hanayacho' and a 1-minute walk. There are 2 dedicated parking spaces and multiple coin parking lots nearby. Business hours vary by day: Mon 11:00-14:00, Tue-Fri 11:00-15:00 / 18:00-20:00, Sat 11:00-15:00 / 17:30-20:00, Sun 10:30-14:00. As holidays are irregular, it's recommended to check their official Instagram (@mugino_yoake) before visiting.
2Purchasing meal tickets and ordering
Purchase meal tickets immediately upon entering from the vending machine. It's a button-type machine without English text or photos. It offers the signature 'Scallop and Sansho Chuka Soba' and 'Beef Soy Sauce and Sansho Chuka Soba', their respective 'Tokujo' (special) versions, sudden limited-time specials (like Kousaka Chicken Rich Tsukemen or Duck-filled Tsukemen during Golden Week or events), kaedama (extra noodle) for 150 yen, scallop takikomi gohan, and charcoal-grilled meat donabe gohan. Announcements for limited menus are made on Instagram. Payment is cash only; cards, e-money, and QR payments are not accepted.
3Seating and receiving your order
A staff member will guide you to one of the 9 L-shaped counter seats. When serving, the staff will perform a finishing touch by freshly grinding Budo sansho pepper from Wakayama Prefecture directly in front of you to enhance the aroma of the Omijidori chicken and sansho. This aromatic moment is a highlight. Your ramen will arrive in about 5-10 minutes, and turnover is relatively quick.
4Other notes
Adding more sansho with the sansho mill on the table midway through your meal further sharpens the soup's flavor. For limited tsukemen menus, you can enjoy it to the end by using the leftover kombu-sui (kelp water) for a soup-wari. The scallop takikomi gohan pairs perfectly with ramen, and a popular way for tourists to finish is by pouring the remaining soup over it to enjoy it like zosui (rice porridge). The staff provides polite service, and the clean interior creates an inviting atmosphere, even for solo female diners.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
