The noodles are thin, straight noodles co-developed with "Menya Teigaku," a famous noodle factory in Kyoto. Their low-hydration, firm texture (patsu-tto) perfectly complements and lifts the clear soup. Toppings include one large clam, several smaller clams, chicken chashu (braised pork) and pork chashu, musubi kamaboko (knotted fish cake), mitsuba (Japanese parsley), leafy greens, and coarsely chopped green onions, forming an elegant arrangement. A popular way to enjoy a change of flavor (ajihan) is to add the table-side shallot olive oil, which introduces a Western-style aroma. In addition to the signature Hamaguri SOBA, the menu offers a rich variety including "Maze SOBA" (Mixed SOBA, 1,100 yen) with chewy noodles and rich sauce mixed with Biyou egg yolk, Niboshi SOBA (Dried Sardine SOBA), Shin-Tori SOBA (New Chicken SOBA), Tsukemen (Dipping Noodles), Abura Soba (Oil Noodles), seasonal limited Clam and Scallop SOBA, Hiyashi Tantanmen (Cold Tantan Noodles), and Spice Curry. 1Before Entering
A street-level shop in Ginza 6-chome, located behind Ginza SIX, a 5-minute walk from Higashi-Ginza Station Exit A1. On weekdays around noon and on weekends, there is often a queue outside the shop. Arriving 30 minutes before opening might mean a wait of about 15 people, and around 12:00 PM, it can be 20-30 people. The turnover is fast, with a typical waiting time of 20-30 minutes. It's relatively easier to enter on rainy days, around 3:00 PM, or late at night. They operate continuously without a mid-day break (11:00 AM - 9:30 PM), closed on Wednesdays, and have New Year holidays.
2Purchasing Meal Tickets & Ordering
When there's a queue, first join the end of the line outside the shop. As you get closer to the front, staff will guide you inside to purchase meal tickets from the vending machine next to the entrance. During off-peak hours, you can enter and immediately buy meal tickets from the machine. The meal ticket machine has English displays and photos, making it easy to use. In addition to the signature Clam SOBA (1,800 yen), the menu includes Mazesoba (1,100 yen), Niboshi SOBA, Shin Chicken SOBA, Tsukemen, Aburasoba, and seasonal limited menus (e.g., Cold Tantanmen, Clam & Scallop SOBA). Toppings include Special Toppings (600 yen), seasoned egg, nori, etc. Side dishes like Spice Curry (500 yen) and half rice can also be purchased from the same vending machine. Payment is accepted via cash, credit cards (VISA/Master/JCB/AMEX/Diners), IC cards for transportation, and QR payment (PayPay/d払い/Rakuten Pay/au PAY).
3Seating & Receiving Your Order
There are only 15 counter seats. Staff will guide you to an available seat, and placing your meal ticket on the counter will process your order. Dishes are served quickly, in 3-5 minutes, indicating an operation focused on high turnover.
4Other
The échalote olive oil on the table is a signature flavor change item; adding it to the Japanese soy sauce broth introduces a Western nuance. Mazesoba comes with its own flavor change set (apple vinegar, soy sauce tare, Tabasco, grated cheese), allowing you to create your preferred flavor combination. Enjoying the large clams mid-meal or later enhances the depth of the broth.

安定した鷄醤油、玉ねぎと鷄節がいい仕事してます👍 食感の良い細麺と具材の中ではいい塩梅の半熟味玉が良かった、久々に頂いたけどやっぱ美味しかった✨
