Mugi to Tori
麦×鶏
Overview
Osaka's Minamisenba, a 6-minute walk from Shinsaibashi Station, is home to "Mugi x Tori," a specialty shop for Tori Paitan (creamy chicken broth) ramen. It's a unique establishment that offers creative variations centered around Menya Teigaku's (a renowned noodle maker) medium-thick noodles and a creamy chicken broth, featuring options like sea urchin, corn, and sea urchin-flavored Dashi-wari (broth diluted with dashi). The signature Tori Paitan boasts an excellent compatibility between its creamy broth and the chewy, medium-thick noodles, resulting in highly refined standard ramen and Tsukemen (dipping noodles). The flagship "Tsuke x Uni Tsukemen" (1,800 yen) is a luxurious creation that combines Tori Paitan broth with sea urchin, where the aroma of flaked nori, low-temperature cooked chicken chashu, rare pork chashu, and triangular menma each play distinct roles. The meal concludes with a unique Dashi-wari (soup diluted with dashi) by adding iriko (dried sardine) dashi. The summer-limited chilled corn soup noodles are a refreshing bowl that pairs cold corn soup with chilled noodles, allowing you to enjoy the textures of vegetables like sweet potato, roasted broccoli, and vacuum-pickled daikon radish. On the table, you'll find the shop's original Black Shichimi (seven-spice blend) and Sansho (Japanese pepper), which add a piquant accent to your bowl when sprinkled in during the latter half of the meal. The compact shop offers 16 seats, with 12 at the counter and 4 at tables. The menu at the entrance is available in four languages, and an English menu is also available inside, demonstrating consideration for international travelers.

4Other
The signature Toripaitan features a creamy soup paired with slightly wavy medium-thick noodles from Menya Teigaku. The "Tsuke x Uni Tsukemen" is a luxurious dish combining Toripaitan with sea urchin, topped with bara-nori (loose seaweed), ajitama (seasoned egg), triangular menma, low-temperature cooked chicken chashu, and rare pork chashu. The classic finisher is "Dashiwari" (soup-wari), where the soup is diluted with iriko dashi (dried sardine broth). On the table, there is a special kuro shichimi (black seven-spice blend) and sansho powder, which adds a flavorful accent later in the meal. Limited menus and temporary closures are announced on the official Instagram (mugi_tori).
