Verbally call out your noodle firmness from 5+ levels—konaotoshi, harigane, barikata, kata, futsu, yawa—when seated. For first-timers, 'barikata' or 'kata' is safe. kaedama (extra noodle) is 180 yen (cash only).
Recommended for first visit
For first-timers, 'Nagahama Ramen' (750-900 yen) with a 'barikata' call is the classic choice. 'Hakata Mori' with mentaiko is also popular. During lunch, kaedama (extra noodle) or rice is free. After the first kaedama, alter the flavor with karashi takana and benishoga on the table, Fukuoka style.

1Before Entering

A 1-minute walk from A7 exit of Toei Asakusa Line 'Higashi-Ginza' station, and also very close from A8 exit after crossing the pedestrian scramble. Open Tuesday-Saturday from 11:00-04:00 (L.O. 03:45) until late at night. Closed on Mondays and Sundays. Open all day without a break. It tends to get crowded during lunch peak (around 12:00) and late-night 'shime' (closing) time (after 22:00). Off-peak hours (around 15:00-18:00) are relatively less crowded.

2Purchasing Meal Tickets and Ordering

To the left of the entrance is a touch-panel ticket machine with photos and English descriptions. Choose from the signature 'Nagahama Ramen' (750-900 yen), 'Hakata Mori' with mentaiko topping, 'Wontonmen', 'Chashumen' (1,150 yen), 'Negi Ramen', or 'Spicy noodles'. Toppings like kikurage (wood ear mushrooms), cabbage, ajitama (seasoned egg), and nori (seaweed) can also be purchased from the same ticket machine. Payment is accepted via cash, transportation IC cards (like Suica), and QR payment (PayPay / d払い / Rakuten Pay / au PAY), but credit cards are not accepted, so please be aware.

3Seating and Receiving

There are about 13 seats in total, with 9 counter seats and 2 tables for four people. Staff will guide you to an empty seat. When seated, you verbally tell the staff your preferred noodle firmness. You can choose from 5 or more levels: konaotoshi (just-flashed - only briefly boiled) / harigane (extra firm - extremely firm) / barikata (very firm - quite firm) / kata (firm - firm) / futsu (regular) / yawa (soft - soft). For first-time visitors, 'barikata' or 'kata' is recommended. During lunchtime, either kaedama (extra noodle) or rice is offered free of charge; please tell the staff when seated.

4Others

On the table are benishoga (red pickled ginger), karashi takana (spicy leaf mustard), white sesame seeds, white pepper, and kaeshi (flavoring sauce). The karashi takana is quite spicy, so it's best to try a small amount first. When ordering kaedama (extra noodle - 180 yen, cash only), verbally state your preferred firmness again. After the first kaedama, adding plenty of benishoga and karashi takana to change the flavor is the authentic Fukuoka way to enjoy it. Paper aprons are also available.
