1Before entering the store
Located inside Hakata Deitos, directly connected to JR Hakata Station. Open from 11:00 AM to 11:00 PM, no holidays (subject to facility). Last order is 10:30 PM. This is a long-established shop founded in 1987, with its main store in Kashii Najima, and is currently operated under Chikaranomoto Company. The "yobimodoshi method" of continuously adding to the soup simmered in a special kiln is a characteristic of the brand. Among the Hakata Men-kaido (Ramen Street) shops, it is relatively easy to enter, with many times in the weekday evenings or before noon when there is no wait.
2Ordering and Payment
There is no ticket machine; it's a food court-style self-service where you order and pay first at the cash register at the entrance. Signature items include "Nitama Shoyu Tonkotsu Ramen" (990 yen), "Chashu Tonkotsu Ramen" (1,090 yen), "Tonkotsu Ramen A Set Meal" (1,100 yen, Ramen + Mentaiko Rice), and Hakata Hitokuchi Gyoza (5 pieces for 300 yen). You specify noodle firmness from "barikata (very firm) / katame (firm) / futsu (regular) / yawa (soft)" at the register when ordering. Credit cards are not accepted, transport IC cards are accepted, QR code payments are not accepted. Using cash or cash combined with IC card is recommended.
3Receiving your order
After paying at the register, you will be given a pager. Find an empty seat and wait; when the pager buzzes, go to the counter yourself to pick up your ramen. Seating consists of 45 seats (mostly tables). Since it's a food court style, there are no escorts; everyone finds their own seat. When leaving, return your dishes to the return counter – it's a self-service operation.
4Other
Next to the pick-up counter, a refrigerator contains beni shoga (red ginger), karashi takana (spicy pickled mustard greens), and grated garlic (with a crusher). Take them yourself as you like and add them at your table. Only pepper and soy sauce are on the tables; flavor-changing condiments must be brought from the self-service corner. The yobimodoshi method soup is a relatively lighter tonkotsu. Adding crushed garlic tightens the flavor instantly. The A set meal with mentaiko rice offers good cost performance for lunch.
