NIBOSHI MANIA
NIBOSHI MANIA
Overview
NIBOSHI MANIA, a specialty niboshi ramen shop, opened in September 2022 on the first floor of an apartment complex behind Yuzawaya Main Store, a 5-minute walk from JR Kamata Station West Exit. The owner, nicknamed Tacky, previously served for many years as general manager at "Hechikan," a renowned rich niboshi ramen shop in Yokohama. Since its opening, NIBOSHI MANIA has drawn daily queues and quickly become one of the most popular establishments in the highly competitive Kamata ramen scene. The signature Niboshi Soba (950 yen) features a double soup, combining rich yet smooth niboshi (dried sardine/anchovy) and animal-based broths. Low-hydration thin straight noodles perfectly intertwine with the soup, complemented by the crisp texture of minced onions and two generous slices of chashu, creating a classic composition. The "Ginrin Niboshi Soba" offers a clear chintan (清湯, clear soup) that highlights the natural flavors of its ingredients. For those seeking even richer options, "NIBOPRESSO" and "PREMIUM NIBOPRESSO" boast incredibly thick, concentrated soups made from a large quantity of niboshi, entirely without animal broth. This showcases the shop's diverse range. The greatest highlight is the daily limited menu. Creative ramen dishes featuring unique types of niboshi and fresh seafood ingredients are offered daily. You might find innovative creations such as Red Snow Crab Niboshi Soba, Cold Tsukemen (つけ麺, dipping noodles) with Iriko Dashi and Black Muts, Ginrin Hairtail Niboshi Ramen, Nira Niboshi Soba, or Thorny Gourd Crab Soba. This highly 'collectible' menu ensures a new ramen experience with every visit. Aeedama (和え玉, seasoned extra noodles), are also incredibly popular, with over 10 varieties appearing daily. These include enticing options like Mentaiko Ohba Genovese, Raw Nori and Shirasu, Salmon and Avocado Cream Cheese, Garlic Shrimp, Oyster Butter, Real Snow Crab Miso, Squid Liver and Ohba, and Ginger Pork Keema Curry. The shop's recommended style is to first enjoy the aeedama as they are, then dip them into the leftover ramen soup for a tsukemen-like experience. With the half-noodle system (a 50 yen refund), you can enjoy a full combination of ramen plus aeedama, allowing you to fully savor the exquisite pairing of niboshi and aeedama. The friendly female staff provide polite service with a smile, and the interior is kept clean and comfortable, ensuring a pleasant dining experience.

1Before entering the shop
A specialty shop for niboshi (dried sardine) ramen, opened in September 2022 on the 1st floor of "Nishikamata Sky Heights", an apartment complex behind Yuzawaya Main Store, a 5-minute walk from the West Exit of JR Kamata Station. Due to its popularity, there are instances of 40 people lining up at 12 PM on weekdays and peak waiting times of 1 hour; late evenings around 7 PM on weekdays or rainy days are relatively easier times to enter. Daily special menus are announced on the official social media the night before.
2Purchasing meal tickets and ordering
When queuing outside the shop, staff members sequentially distribute numbered tickets and prompt customers to purchase meal tickets, a unique operational system. Following staff instructions, enter the shop, purchase meal tickets from the vending machine, and return to the queue outside. The meal ticket machine has no photos or English, so it is reassuring to familiarize yourself with the menu names beforehand (Niboshi Soba / Nibo Presso / Premium Nibo Presso / Ginrin Niboshi Soba / Daily Special / various Aedama). Aedama (flavored extra noodles) are typically ordered in addition to the main ramen, a regular customer style, and a half-noodle system (50 yen refund) allows for a full ramen + Aedama combination. Payment is cash only; cards, e-money, and QR payments are not accepted.
3Seating and receiving
The shop has a compact layout with only 10 counter seats. Staff will guide you to your seat. Service is speedy, typically taking about 5 minutes. The water server is self-service (located near the entrance, so you need to stand up from your seat to get refills).
4Other
The signature Niboshi Soba features a double soup of niboshi and animal-based broth, served by a proprietor who became independent after serving as general manager of "Hechikan" in Yokohama. Nibo Presso and Premium Nibo Presso are made with a rich soup created by boiling down large quantities of niboshi without animal products, offering a unique blend of niboshi grittiness and creaminess. Aedama, with over 10 daily rotating varieties such as Mentaiko Shiso Genovese, Raw Nori and Shirasu, Salmon and Avocado Cream Cheese, Oyster Butter, Real Snow Crab Miso, and Garlic Shrimp, is meant to be enjoyed twice: first on its own, then dipped into the leftover soup.
