Niboshi to Nihonshu Sugidama
煮干しと日本酒 すぎだま
Overview
Niboshi to Nihonshu Sugidama - Soy Sauce, Dried Sardine, Seafood, Rich A specialty shop for niboshi (dried sardines) ramen, inheriting the lineage of Yokohama's renowned "Hechikan." It will open in February 2026 on B1F of Otemachi Tokiwabashi Tower (under a refreshed name and operation from its former "Hechikan Tokyo"). The signature "Tokunou Niboshi Soba" (Extra-Rich Dried Sardine Soba) features a thick, grey, cloudy soup paired with low-hydration straight thin noodles, delivering a powerful rush of integrated umami, bitterness, and saltiness from the niboshi. The menu also boasts a rich variety of seasonal offerings, such as Rich Sea Bream Soba and Rich Oyster Soba. As the name suggests, the establishment offers a comprehensive selection of sake and à la carte dishes. With weekday evening operations, it's perfect for those who just want ramen, or for guests looking to enjoy a light drink before finishing their meal with a bowl. The attractive duality of its Japanese modern sake bar ambiance makes it accessible and appealing to both ramen enthusiasts and sake lovers. Orders are placed via tablet at your seat, and payment is settled at the register upon departure. Credit cards, e-money, and QR code payments are all accepted.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.
