Nidaime Hibiki

Overview
Nidaime Hibiki is a ramen shop in Higashisakura, Nagoya, which opened in February 2016 as the second generation (a branch) of the original Hibiki that was located along Hirokoji Street, east of Sasashima Intersection, south of Nagoya Station. The signature Nidaime Miso Ramen is a classic Sapporo miso ramen, combining medium-thick curly noodles from Hokkaido's Nishiyama Seimen with a rich miso soup that blends a chicken bone base with Hokkaido kelp and scallops. The soup has a strong richness but is mild and free of any strong unique flavors, pairing exceptionally well with the chewy noodles. The other main pillar is their Chuka Soba, which uses thin Chinese noodles. It features a gentle soy sauce flavor with a subtle sweetness, making it a light option for a 'shime ramen' (meal-ender) after drinks. The Special Chuka Soba is a luxurious serving with four slices of chashu, a seasoned egg, corn, nori seaweed, and green onions, offering an elegant finish with prominent scallop flavor. Derivative menus such as Ebi Miso Ramen (shrimp miso ramen), Ebi Zukushi Miso (all-shrimp miso), Kara Miso (spicy miso), and Abura Soba (oil noodles) are also available. A distinctive feature is that in the evenings, it transforms into 'Chuka Stand Hibiki,' offering a wide range of 'machi-chuka' (casual Chinese diner) dishes like gyoza, karaage (fried chicken), beef tendon doteni (stew), eggplant miso stir-fry, various fried rice dishes, and a 'banshakusetto' (drinking set) consisting of 3 gyoza, 1 karaage, and a small side dish, giving it a dual purpose for casual drinks. During lunchtime (11 AM to 2 PM), ordering any noodle dish comes with free rice, which customers serve themselves from a rice cooker. Furikake 'Yukari' is also provided. It is conveniently located a 5-minute walk from Sakae Station and a 3-minute walk from Hisaya-odori Station, also within walking distance of Hisaya-odori Park and Oasis 21.
How to Order

1Before entering the shop
A 3-minute walk from Hisaya-odori Station Exit 5A, or a 5-minute walk from Sakae Station. The business operates in two shifts (lunch 11:00-14:15/14:30, dinner 17:00-22:30/23:00/23:30), and closing times vary by day of the week. Note that on Sundays and public holidays, the evening closing time is 22:30, which is 30 minutes earlier. There is a mid-day break (14:15/30-17:00), and the shop is open every day. On weekdays around 12:00 PM and Saturdays around 1:00 PM, there might be a line outside, but the turnover is fast, and you can usually enter in about 5-10 minutes.
2Purchasing meal tickets and ordering
Purchase meal tickets from the vending machine at the entrance. The buttons have photo displays, but no English. The main dishes are the Nidaime Miso Ramen, Nidaime Spicy Miso Ramen, Chuka Soba, and Abura Soba (640-950 yen each). During lunchtime, a free rice service (self-serve) is included with noodle dishes. Payments are accepted via QR code payment (PayPay, d払い, Rakuten Pay, au PAY) and cash; credit cards and e-money are not accepted.
3Seating and receiving your order
There are about 20 counter seats and 4 tables, for a total of approximately 34 seats. Hand your meal ticket to the staff when they guide you to your seat. Orders are served in about 5 minutes, and it's characteristic for multiple people with different orders to be served almost simultaneously due to the fast turnover.
4Other
Rayu (chili oil) is available on the table; adding it to Abura Soba or spicy miso dishes halfway through is a common way to change the flavor and increase spiciness. For Miso Ramen, adding a butter topping (selectable on the menu) is another way to make it milder. In the evenings, the shop operates as "Chuka Stand Hibiki," offering Chinese izakaya dishes (e.g., late-night drink set with 3 gyoza, 1 fried chicken, and a small side dish; eggplant miso stir-fry; beef sinew stew; various fried rice dishes), making it suitable for a casual drink.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.
