Noguchi Taro Ramen Shinsaibashi
野口太郎ラーメン 心斎橋店
Overview
A specialty ramen shop focusing on shellfish dashi (soup stock), run by the Michelin one-star Kappo (traditional Japanese restaurant) "Noguchi Taro". Their signature Taro Ramen is a bowl featuring a shellfish dashi layered with oyster, clam, and shijimi (freshwater clam), combined with a tare (sauce) blended from multiple Kyoto-produced soy sauces. The clear golden soup and medium-thin straight noodles with whole wheat flour embody Japanese dashi culture. Toppings include kappo-prepared ingredients such as rare chashu (braised pork), Satsuma-age (fried fish cake) infused with truffle, and white wood ear mushrooms. A few drops of the accompanying perilla oil spread a refreshing aroma, deepening the umami of the shellfish. Beyond the shellfish dashi Taro, the menu stands on three pillars: Hanako with bonito soy sauce, and Jiro with rich soy sauce. The "Special" option with luxurious toppings is also popular. Located in the bustling Higashi-Shinsaibashi area, it operates until 4 AM, making it a popular choice for a late-night meal or a final dish after drinks. Some customers have noted a similar style to "Jinrui Mina Menrui" in Nishinakajima-Minamigata.
How to Order
(Check the official account below in advance for irregular closures and updates)
Official SNS:https://www.instagram.com/noguchitaroramen_shinsaibashi/
1Before entering
The entrance is along the street in Higashi-Shinsaibashi, but the door is located past a dimly lit passage slightly set back from the signboard, so first-time visitors may easily miss it. Reservations are not accepted. The shop is almost full from evening until around 11 PM, gradually becoming less crowded after midnight, and counter seats may become available after 1 AM. During busy times, there will be a waiting line outside the shop.
2Ordering
Upon entering, staff in black uniforms will guide you to an available seat. There is no ticket machine; staff take orders at your table. The menu is available in both Japanese and English. Choose from three signature ramen types: "Taro" (clam broth), "Hanako" (bonito soy sauce), and "Jiro" (rich soy sauce). You can also add a luxurious "Special" topping set, or side dishes like char siu rice bowl or fried chicken. Prices are listed without tax, so consumption tax will be added at checkout. Payments are accepted via cash, credit card (VISA/Master/JCB/AMEX), transportation IC cards, WAON, iD, QUICPay, and PayPay.
3Seating and receiving
There are 6 counter seats, 3 tables for 4 people, and 3 tables for 2 people, for a total of 24 seats. During busy times, solo diners may share tables. It takes approximately less than 10 minutes from ordering until your ramen is served.
4Other
Ramen is served with perilla oil in a small dropper bottle. Adding a few drops in the latter half of your meal changes the flavor profile, layering the aroma of perilla over the clam aftertaste. Table condiments are minimal. A campaign may be running where customers receive Häagen-Dazs ice cream by completing a survey upon leaving.
