NOUILLES JAPONAISE Tokuichi
NOUILLES JAPONAISE とくいち
Overview
NOUILLES JAPONAISE Tokuichi - Shoyu (Soy Sauce) / Shio (Salt) NOUILLES JAPONAISE Tokuichi is a ramen restaurant located on the first floor of Banzai Market, within Sapporo's Jogai Market (Outer Market), supervised by the Michelin one-star French restaurant 'Le Musée'. Its signature Wood-Fired Shoyu Ramen is known for its clear soup made with Hokkaido chicken and Mikasa chicken sauce, layered with the aroma of wood-fired duck and chicken chashu, reminiscent of French consommé in its clarity and depth. For salt ramen, the 'Tokujo Ramen SPECIAL' (Premium Ramen SPECIAL) made with mineral salt from Kumaishi (Oshima region, Hokkaido) is a staple. New creations appear seasonally, such as a flavor change involving melting kelp foam, or limited-time offerings like Shiraoi beef and bamboo shoot ramen. The noodles are thin straight noodles from Sudo Seimen in Asahikawa, characterized by the aroma of custom-made flour containing wheat bran. The interior is a Japanese-modern space that doesn't feel like a typical ramen shop, with a table-only seating layout. Bistro-like touches are incorporated into the service, such as rosemary-scented oshibori (wet towels) and plates made of Sapporo soft stone. Many reviews describe it as 'a dish that transcends the boundaries of ramen,' and it is known for establishing a new presence in Sapporo's noodle scene with its French-inspired approach.

1Before entering
Located on the 1st floor of Banjai Market, outside the market, a 6-minute walk from Nijuyonken Station. Although it opens at 9:00 AM, there are often long queues starting from 8:00 AM on holidays, and several people line up at opening time on weekdays. If you prefer not to wait in line, you can make a reservation in advance via the reservation site OMAKASE. Business hours are short, until 3:00 PM, and it is closed on Wednesdays.
2Purchasing meal tickets and ordering
Staff will guide customers into the shop in the order they lined up. Upon entering, purchase meal tickets from the vending machine. Payment is cash only; cards, e-money, and QR code payments are not accepted. The vending machine displays menus with photos, making it easy to choose even without foreign language menus. The signature dish is "Tokujo Raamen Makibi Shoyu" (Special Ramen Wood-Fired Soy Sauce) (1,700 yen), and for salt ramen lovers, "Tokujo Raamen SPECIAL Kumaishi" (1,700 yen) is popular. The owner recommends following the "Top-Left Rule" for choosing. Limited-time menus (such as Shiraoui beef and bamboo shoots, niboshi) are added seasonally.
3Seating and receiving your order
After handing over your meal ticket, staff will guide you to an available table. There are no counter seats; the layout features one 8-person center table and two 4-person tables. Upon seating, a performance involves pouring hot water over a dried oshibori (wet towel) infused with rosemary aroma oil, which is then provided along with water. The estimated wait time for your order is generally 10 to 15 minutes.
4Other
Standard ramen shop condiments like pepper or vinegar are not placed on the tables, encouraging customers to enjoy the menu as a complete dish. Breaking and mixing the konbu (kelp) foam midway through can offer a change in flavor. Photography is permitted within reasonable consideration for other customers. The soup is designed to retain its temperature and aroma until the last sip, so it is recommended to enjoy it while it is hot.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
