"Noukou Chukasoba Yoshida" is a specialty chukasoba (Chinese Soba / Ramen) shop located in an alley in Shinsaibashi Minamisenba. True to its name, "noukou" (rich/thick) is the theme, featuring a signature bowl centered around a powerful kaeshi (tare/sauce base) made with tamari soy sauce and the rich depth of seabura (pork back fat). While you can request "yawaraka" (soft) noodles, "kata" (firm) cannot be specified. By default, the noodles have a satisfying chew, served with the texture intended by the owner. The rare chashu (braised pork belly) made with Nasu Kogen pork from Tochigi Prefecture is prepared to be juicy, suppressing the sticky texture common in many rare chashu, and offering a substantial presence of the meat itself. Beyond the regular Noukou Chukasoba (Rich Chukasoba) for 850 yen, the menu is also rich with seasonal limited-time options such as Miso, Jirunashi Seabura Chukasoba (Soupless Pork Back Fat Chukasoba, with selectable vegetable portions of 300g/450g), tsukemen (dipping noodles), the monthly limited Seabura Zaru Chukasoba DX (Pork Back Fat Cold Dipping Chukasoba DX), and Seabura Stamina Ramen. 1Before entering
Located on the 1st floor of IBC Shinsaibashi East in Minamisenba, a side street off Midosuji, a 3-minute walk from Shinsaibashi Station. There are no numbered tickets or reservations; during busy periods, you will queue outside. During peak hours (12:00-13:00), there's often a 5-6 person wait, taking about 15-20 minutes to enter. However, since they operate continuously, there may be no wait after 14:00 or right after opening. There is no parking, so please visit on foot or by public transport.
2Purchase meal ticket / Order
A ticket vending machine is located inside the shop, with photos but no English display. It's unclear whether to join the queue directly or purchase a ticket first, so it's safest to observe the queue and decide. If there's no or a short queue, enter, buy a ticket from the machine, get water, and take an empty seat. In addition to the signature Rich Chuka Soba (850 yen), Extra Rich Back Fat Chuka Soba (1,100 yen), and Back Fat Zaru Chuka Soba DX (Regular 1,500 yen / Large 1,620 yen), limited Soupless Back Fat Chuka Soba allows you to choose vegetable portions of 300g/450g and whether it's with or without soup. For noodles, you can specify yawa (soft), but not kata (firm). Until 14:00 on weekdays, a small rice is offered for free, and staff often ask if you'd like it. Payment is cash only; credit cards, e-money, and QR payments are not accepted.
3Seating and serving
There are a total of 20 seats: 12 counter seats and 4 tables (each for 2 people). Water is self-service; after purchasing your ticket, get water and take an empty seat. During busy times, staff will guide you to a seat. Service is fast, with your bowl usually arriving about 10 minutes after being seated.
4Other
Limited menus (Back Fat Chuka Soba, Back Fat Zaru Chuka Soba DX, Back Fat Stamina Ramen, etc.) are available in limited quantities and may sell out quickly, so if you have a specific one in mind, it's safer to visit early. There are no unique condiments on the table, nor are there any recommended flavor changes or eating instructions displayed, so the basic approach is to enjoy the dish as served. When leaving, there's no need to return dishes to a collection point; you can simply leave your seat.
