Ore no Ramen Appareya
俺のラーメン あっぱれ屋
Overview
"Ore-no-Ramen Appareya" is an incredibly popular ramen shop, representative of Kyoto, nestled in the mountains about 40 minutes by car south of central Kyoto, along National Route 307 in Nashima, Joyo City, Kyoto Prefecture. It's a perennial top-ranked shop on Kyoto's Tabelog and has been selected for Ramen WEST Hyakumeiten (百名店 - Top 100 Shops) for 23-25 consecutive years. Despite its suburban location more than 3km from the nearest station, many enthusiasts flock here from outside Kyoto by car, bus, or bicycle, truly making it worthy of being called "Ramen no Seichi" (ラーメンの聖地 - Sacred Place for Ramen). The signature "Kokumaro Shio Ramen" (こくまろ塩ラーメン - mellow salt ramen) for 1000 yen features a salt soup blending tonkotsu (豚骨 - pork bone) and gyokai (魚介 - seafood) broths. Its delicate yet profound flavor, meticulously balanced between salt, pork bone, and seafood, fascinates enthusiasts with its perfection, allowing every last drop to be savored. The "Nigoritoro Shio Ramen" (濁とろ塩ラーメン - cloudy, thick salt ramen) for 1450 yen (with chashu) is a frothy, creamy salt tonkotsu espuma (foam) finished with a hand mixer, offering a more robust flavor with an added punch from fish powder. Appareya is also said to be "the first shop in Japan to froth soup," making it the origin of the "awa-kei ramen" (泡系ラーメン - foamy ramen) style that is now widespread, particularly in Kyoto. The homemade, extremely thick, flat, wavy noodles boast a chewy texture and an excellent ability to entangle with the soup due to their waves, reminiscent of high-quality fresh pasta. The "Pastrami-style Rare Chashu" (チャーシュー - roasted pork slices), scattered with whole peppercorns, is thinly sliced and arranged like flower petals, allowing the direct umami and aroma of the meat to shine through. Toppings like "Zaimoku Menma" (材木メンマ - thick bamboo shoots) with hidden cuts, soft-boiled ajitama (味玉 - seasoned egg), and chopped green onions are all meticulously considered, and the shop is acclaimed for "ramen as a comprehensive art form," with attention even to the bowl's color and arrangement. However, the true star is the "Super Tsukemen" (スーパーつけ麺 - Super Dipping Noodles), limited to 20 servings (200g medium for 1200 yen~). This super popular menu item sells out right after opening, with many customers queuing 30 minutes or more before the shop even opens, specifically for this dish. Noodles can be upsized to a large portion for free. Regulars also enjoy an "Ajitsuke Meshi" (味付け飯 - seasoned rice) side dish for 150 yen, dipping it into the leftover soup to enjoy it ojiya-style (おじや - rice porridge-style). The shop operates for lunch only (11:30-14:00), with regular holidays on the 4th Saturday, Sundays, and national holidays. As temporary closures or non-regular holiday closures are frequent, it's advisable to check their official blog or X (Twitter) for the latest business status before visiting.

1Before entering the store
This is a suburban store located in Nashima, Joyo City, Kyoto Prefecture, along National Route 307. The nearest station, Yamashiro-Aotani Station, is more than 3km away, so access is practically by car, bus, or bicycle. If coming by car, it's 10-15 minutes from Kyonawa Expressway "Tanabe Nishi I.C.". There is parking in front of the store (limited spaces). If coming by bus, take Keihan Bus Route 62 (for Ujitawara direction Ryokuen-zaka) from Kintetsu Shintanabe Station or JR Kyotanabe Station for about 22 minutes, and get off at "Myojogahara". Buses run once an hour, so checking the timetable is essential. Business hours are lunch only, 11:30-14:00, Monday-Saturday. Closed on Sundays, public holidays, and the 4th Saturday of the month (temporary closures are also frequent). If you're aiming for the signboard's limited 20 servings of "Super Tsukemen", it's a rule to line up more than 30 minutes before opening. On weekdays after 1 PM or during rain, if you're lucky, you might get in with a wait of 2-5 people. Business status is announced on the official blog or official X on the day, so it's safe to check before visiting. 2. Ordering and Payment There is no ticket machine inside the store; instead, staff members take orders from customers in line one by one, which is a unique system. Deciding on your menu beforehand will prevent confusion. The main lineup includes the signboard's Kokumaro Shio Ramen for 1000 yen, Kokumaro Shio Chashu-men for 1250 yen, Nigotoro Shio Ramen, Nigotoro Shio Chashu-men for 1450 yen, the limited 20 servings of Super Tsukemen (medium 200g from 1200 yen~, extra chashu 350 yen, extra menma 200 yen, etc.), and a side of seasoned rice for 150 yen. Noodles can be upgraded to large size (oomori) for free. Payment is cash only; credit cards, e-money, and QR code payments are not accepted. 3. Seating and Receiving The interior is compact with counter seats only. Staff (the owner and his wife) will guide you to an empty seat. Since orders are taken while waiting in line, the appeal is the speed at which your ramen arrives shortly after being seated. The careful operation of guiding customers in groups of 3-4 and not rushing them to sit at the counter is well-regarded. 4. Other Only a small amount of condiments, such as pepper oil, are on the table. Adding a few drops of pepper oil midway through changes the flavor profile. The seasoned rice can be eaten as is, or you can dip it in the soup for an 'ojiya' (rice porridge) style. The beautiful service gestures of the owner couple and the cleanliness of the 17-year-old well-maintained store also add to the enjoyment of the visit. After leaving the store, don't forget to check parking and bus times. From Myojogahara bus stop to Yamashiro-Aotani/Yamashiro-Taga Stations is a gentle downhill walk of 30-40 minutes, and some enthusiasts enjoy walking for exercise.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
