Despite its unassuming facade and discreet entrance, it has been cherished for many years as a late-night oasis and the perfect "shime" (meal to end the night) after drinks in Kitashinchi. The signature dish is "Pepe Shio," a chicken salt clear soup ramen. Its transparent broth elegantly marries the rich umami of chicken with a crisp, refined saltiness, paired with medium-thick straight noodles crafted by Kyoto's Menya Teigoku. How to Order
1Before entering
A hidden ramen shop on the 2nd floor of Nippo Kitashinchi Building, behind Dojima Avanza, a 2-minute walk from JR Tozai Line Kitashinchi Station Exit 11-23. The forcibly hung "Pepe" sign on the 1st floor staircase is the landmark, making it a difficult-to-find location if you don't know it. Operating hours are in two parts (Lunch 11:00-15:00 / Dinner 19:00-03:00 the next day, Saturdays until 00:00 the next day only), closed Sundays, closes early when soup runs out, and may also be closed on public holidays. Lunchtime is calmer compared to late-night hours, and it's often easy to enter even around 12:00 on weekdays.
2Purchasing meal tickets and ordering
There is no ticket machine; it's a pay-after-eating system where you order verbally from staff after being seated. For lunchtime, there's "Ramen Teishoku" (900 yen - a set with salt or shoyu ramen + rice or onigiri + raw egg + natto + pickles). For late-night hours, options include "Pepe Shio" (1,000 yen - signature dish), "Pepe Shio Paitan", "Pepe Shio DX" (1,200 yen - all toppings), "Shijimi Ramen", and seasonal miso. Payment is by cash and PayPay QR code only; credit cards and e-money are not accepted. Alcoholic beverages are unique: self-service from the refrigerator, settled at the end of your meal.
3Seating and receiving
Only 7 seats in total: 5 counter seats + 2 simple counter seats. Primarily for solo diners, a realistic shop size for 2-3 people. Staff may operate alone depending on the time. Serving takes approximately 5-8 minutes. When served, you can see char siu, chicken meatballs, and chicken skin scallion skewers for "Pepe Shio". The medium-thin straight noodles made by Kyoto's "Menya Teigoku" are rich in wheat aroma and characterized by a low water content, giving them a firm, crisp bite.
4Other
In-store photography is prohibited (due to past issues, explicitly stated in reviews). It's a classic move to change the flavor mid-meal with the pickled garlic in soy sauce available on the table. Late-night hours (around 1 AM) are bustling with tipsy salarymen and regulars returning from the nightlife, but during early morning hours (around 9:30 AM), it's often deserted. The interior is Mexican-themed, with tequila being the main alcohol on the shelves, creating a unique atmosphere for a ramen shop.

ごはんかおにぎりを選べ、生卵と漬物が食べ放題。希望制で納豆も付く。
塩や塩白湯と比べ出汁の旨味が弱く、やや化調頼みな魚介系醤油といった印象。
