Ordering difficulty
Two-step system: tell noodle firmness when handing tickets, then verbally call for ninniku (garlic), yasai (vegetables), abura (back fat), karame (more sauce), and "Are" (daily free topping) just before serving.
Recommended for first visit
For Jiro-style beginners, Small Ramen (1,000 yen) with "ninniku sukoshi (a little garlic), yasai (vegetables), abura (back fat)" is standard; Mini is popular among female customers.
Notes
Portions are large (Small is more than a regular ramen size), expect over 60 min wait during peak, so off-peak visits are advised; rice is extra (150 yen).

1Before Entering

Located 5 minutes walk from Shinsaibashi Station Exit 8, next to Tori Soba Zagin Niboshi-ten in Minamisenba. No numbered tickets or reservations; during peak hours, you will queue outside. As they operate continuously, visiting around 2 PM or after the lunch peak can reduce waiting time. During weekday lunch peak (11 AM - 12 PM), there can be 10-20 people waiting; on Friday nights around 8 PM, the queue can extend outside with 20 people; there are also instances like a 1-hour wait on Sunday at 12:45 PM, so be prepared for waits exceeding 60 minutes during peak hours. There is no parking, so please visit on foot or by public transport.

2Purchasing Meal Tickets / Ordering

There is a touch-panel ticket machine inside with photos and English display. The timing for purchasing tickets during crowded times (whether to use the machine before queuing or after queuing) is unclear, so it's safest to observe the queue and decide. In addition to the signature Small Ramen (1,000 yen), Large Ramen (1,100 yen), Shobuta (small pork), Mini Ramen, Miso-yama, Tsukemen (dipping noodles), and Mazesoba (soupless ramen), there are toppings such as rice (150 yen) and extra pork fat (Niku-abura) (150 yen). Payments are accepted in cash or transportation IC cards (like Suica); credit cards and QR payments are not accepted.

3Seating and Receiving Your Order

There are only 12 counter seats, no table seating. It is a two-step ordering system: when you hand your meal ticket to the staff, you tell them your desired noodle firmness (kata (firm), futsu (regular), yawa (soft)), and just before your ramen is served, you make your "preference call" (amount of ninniku (garlic), amount of yasai (vegetables), abura (back fat), karame (more sauce = richness of flavor)). The staff will ask, "Ninniku iremasu ka?" (Would you like garlic?), so beginners can respond with a call like "Ninniku sukoshi (a little garlic), Yasai (vegetables), Abura (back fat)". You can also simultaneously ask for "Are" (a free daily topping like fish powder, spicy takana, numbing spicy croutons, sansho pepper, etc.), which is announced daily on the official app. Instructions on how to order are provided at the seats, so first-time visitors can feel at ease.

4Other Information

Vinegar is available on the table; adding a dash at the end is a classic way to change the flavor and make it refreshing. Dissolving a small amount of ninniku (garlic) into the soup allows you to enjoy the distinctive "guilty pleasure" flavor change unique to Jiro-style ramen. Water and toothpicks are self-service; take them from next to the ticket machine before heading to your seat. Even the "Small" size is larger than a regular size at most ramen shops; Large Ramen and Shobuta (small pork) are very substantial, so if you're not used to it, it's safer to start with Mini or Small.
