Ramen Hayato
らーめん颯人
Overview
A popular ramen shop in Minami-Morimachi, Osaka, famous for its miso ramen, with just 7 counter seats on the street level. The owner, who trained at "Kadoya Shokudo," is known for meticulously preparing each bowl, and the shop is listed among the Top 100 Ramen Shops in Osaka and has received a Michelin Bib Gourmand. The signature "Miso Ramen" features a soup made from animal broth blended with fish powder, stir-fried in a wok with lard. Unlike types that form an oil slick on the surface, this one offers a grainy texture and rich flavor derived from koji. Ginger provides a sharp accent, and yuzu peel on top of white leeks leaves a refreshing aftertaste. The homemade medium-thick flat noodles are both elastic and supple, perfectly picking up the rich miso soup. For an extra luxurious topping of char siu (additional 1,000 yen), you can enjoy multiple cuts of Kagoshima Kurobuta (Black Pork) and Kirishima Kogen Royal Pork, including shoulder loin, belly, and marbled cuts, all at once. The clear broth "Shoyu Ramen" (Soy Sauce Ramen) and "Shio Ramen" (Salt Ramen) offer a completely different experience from the miso, crafted delicately with only Hinai Jidori (chicken) based animal broth. Yuzu peel is a common accent, reflecting the owner's aesthetic. The clean interior features rules based on the owner's strict preferences: "No artificial fragrances from perfumes or hair products," "Please refrain from private conversations," and "No photography other than the food," fostering an atmosphere that values the time spent enjoying ramen.
How to Order
(Check the official account below in advance for irregular closures and updates)

1Before Entering
As the shop has relatively frequent irregular closures, it's safest to check their official account for the day's operating status before departing. Note that their regular holidays are complex: the first Monday, first Tuesday, and second to fifth Sundays of each month. The shop opens at 11 AM; on peak days, queues can form as early as 10 AM, and on busy days, you might wait for 2-3 rounds of customers. It's explicitly stated that entry will be denied to anyone wearing strong artificial fragrances like perfumes, hair products, or fabric softeners, so please be mindful of your grooming before visiting. Sometimes, a booklet with the shop's rules circulates at the end of the queue, and on some days, new customers are expected to pass it on.
2Ordering and Payment
There is no ticket machine. Staff will either take your order while you are waiting in line outside or you will place your order verbally at the counter after being seated. Signature items include Miso Ramen (1,600 yen), Shoyu Ramen (1,100 yen), Shio Ramen (1,200 yen), as well as extra Kagoshima Kurobuta char siu (1,000 yen) and medium white rice (200 yen). Since the menu is primarily in Japanese, it's smoother if you decide on your order beforehand. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and Receiving
There are only 7 counter seats, so please sit sequentially as guided by the staff. The estimated time until your order is served is 5-15 minutes after being seated. There is an atmosphere of quiet observation, refraining from private conversations, as the owner meticulously drains the noodles and plates each bowl. Photography of anything other than your food (e.g., the interior, the owner, other customers) is prohibited, so limit your photos to your ramen bowl on the table.
4Other Notes
The condiments on the table are minimal, so it's recommended to first enjoy the soup and noodles as they are. As the aroma of yuzu peel and ginger develops, it changes the character of the soup, so introduce flavor adjustments slowly. When leaving, pay at the counter, and please vacate your seat promptly after finishing your meal for waiting customers outside.
