Ticket vending machine operation is standard. The 250 yen Kinmedai Chazuke is a separate order, a unique way of eating that completes the meal with ramen.

Notes
Only 16 counter seats, so there might be a queue during lunch peak hours. Cash only. Some say the saltiness is a bit strong, so adjust with kaedama (extra noodle) or chazuke as preferred.

1Before entering

This is a specialty restaurant for salt ramen with golden sea bream dashi (soup stock), located in Kabukicho and part of the "Hayashida" group, widely supported in the Shinjuku area. Open from 11 AM until the evening session, Monday to Sunday (specific hours/holidays to be confirmed at the store). Many times you can enter without waiting in a line, such as Sunday at 1:30 PM or Tuesday around 6 PM. On April 12th (Sunday) at 1:54 PM, there was a 15-minute wait for 4 people. On holidays at 12 PM, 9 people were present. On Tuesday at 8 PM, the store was 90% full. On weekdays during lunch, the store was also 90% full, indicating moderate crowds around Shinjuku Station with many opportunities to enter without queuing.

2Purchase meal tickets

Purchase meal tickets at the ticket vending machine at the entrance, then proceed to your seat. Self-service water is available, and staff will guide you to your seat. Signature dishes include Kinmedai Ramen (Golden Sea Bream Ramen) for 900 yen, Special Kinmedai Ramen for 1200 yen, Kinmedai Tsukemen (Dipping Noodles) for 950 yen, Kinmedai Chazuke (Golden Sea Bream Ochazuke) for 250 yen, Paitan Ramen, flavored egg topping, and kaedama (extra noodle) for 150 yen. Golden sea bream ramen under 1000 yen is rare in Shinjuku, making it highly cost-effective. The Kinmedai Chazuke for finishing your meal is a specialty of the shop, and enjoying it with ramen is a classic way to eat. Payment is cash only; credit cards, electronic money, and QR payments are not accepted.

3Seating and receiving your order

There are only 16 counter seats. If there are empty seats, you will be guided in order. Hand your meal ticket to the staff when you sit down. Orders are served quickly, in about 2-5 minutes, indicating good table turnover. Paper aprons and hair ties are available upon request, showing consideration for solo female diners.

4Other

As an affiliate of the "Hayashida" group in the Shinjuku area, this specialty shop features salt ramen that utilizes golden sea bream dashi as its signature dish. The greatest feature is the ara-dashi soup, made primarily from golden sea bream bones. The shop is particular about temperature control and stewing time to maximize the flavor and umami of the golden sea bream. The soup has a clear, beautiful appearance with an elegant, deep salt-based flavor, where green onions and finely chopped onions are exquisitely effective in balancing a refreshing taste with richness. A piece of fragrant grilled golden sea bream (or skin) is added as a garnish, acting as an aromatic accent. The noodles are aged, multi-hydrated noodles made from carefully selected wheat and whole wheat flour, offering a smooth, chewy, and firm texture. The chashu (roast pork) is low-temperature cooked, moist, supple, and a rare-style cut with less fat. The Kinmedai Chazuke for finishing your meal (250 yen) is served with rice and a small piece of grilled golden sea bream in a bowl with dashi, allowing you to pour the leftover ramen soup over it for a harmonious pairing. It is popular as "a highly complete dish where one meal (ramen + chazuke) can be enjoyed twice." This shop is widely supported by repeat customers around Shinjuku Station as a place to enjoy elegant, Japanese-style salt ramen and chazuke to finish the meal.
