8 minutes walk from JR Sapporo Station, this is the northernmost branch of the original Ramen Jiro, the only one in Hokkaido, and the 42nd direct branch out of 45. True to its direct lineage, it serves a bowl with homemade extra-thick flat straight noodles, a tonkotsu shoyu (pork bone soy sauce) slightly emulsified soup, a mountain of Hokkaido-grown vegetables, and thick, tender buta (chashu), all crafted with the same quality as the original Jiro in the Tokyo metropolitan area. 1Before entering
About 8 minutes walk from JR Sapporo Station or "Sapporo" Station on the Namboku Subway Line. Business hours are Monday-Friday from 11:00-14:00 and 17:00-around 20:30 (lunch and dinner shifts), and Saturdays from 10:30-14:30 (lunch only). Closed on Sundays. As they often close early once ingredients run out, it's safest to check their official X account for daily business information before visiting. Information on public holiday openings is also announced on their official X. During peak hours, the queue extends outside, but it's relatively easy to get in before opening or right after the evening shift starts (around 17:00). There's a luggage storage area outside the shop, so visitors from afar can relax.
2Purchasing meal tickets
The system is to purchase a meal ticket from the vending machine at the entrance after entering the shop. Even when queuing, wait at the end of the line, and once called inside, purchase your meal ticket at the vending machine, then wait on the bench inside for a seat to become available. The vending machine has no photos or English descriptions, and photography is prohibited, so it's easier to choose if you check the menu in advance (Ramen (small) 1,100 yen / Mini Ramen (mini ramen) 950-990 yen / Buta mashi (more pork) 300 yen / Raw egg 100 yen / Shibire (numbness, sansho pepper) 100 yen / Tsukemen (dipping noodles), etc.). Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and receiving
There are only 15 counter seats, and turnover is quick. After being seated, hand your meal ticket to the staff. Just before serving, you'll be asked "Ninniku iremasu ka?" (Would you like garlic?). At this point, you verbally call out your preferences, including the amount of Yasai (vegetables), Abura (back fat), and Karame (more sauce) (e.g., "Ninniku sukuname (less garlic), Yasai mashi (more vegetables), Abura mashi (more back fat)"). For first-time visitors, it's safest to make no call or just "Ninniku sukuname (less garlic)," then gradually increase as you get used to it.
4Other
There are no notable flavor-changing condiments on the table; the flavor profile is finalized at the calling stage. Only photos of the ramen are allowed inside; photography of the vending machine or the entire shop interior is prohibited. Furthermore, there's a shop rule to refrain from using smartphones during or after eating, so quickly take a photo of your ramen after it's served, then focus on your ramen. The shop operates on a batch system assuming complete consumption, so if you're not confident, adjust the amount with "Men sukuname (less noodles)" or "Mini Ramen (mini ramen)." When leaving, please place your dishes on the counter and quickly vacate your seat to match the shop's rhythm.
