Located a 5-minute walk from JR Kamata Station East Exit, this is the first Tokyo branch of "Ramen Jun," known as the pioneer who introduced Niigata Tsubame-Sanjo style (Tsubame-Sanjo-kei) pork back fat soy sauce ramen (sebura shoyu ramen) to the city. Since its opening in June 2005, it has been a long-standing favorite in the competitive Kamata area, with a sister branch also located in Kameido, Tokyo. Its signature style, originating from Niigata's Tsubame-Sanjo region, is "pork back fat x dried sardines (niboshi) x soy sauce," with chopped onions and rock seaweed (iwanori) as essential toppings. Beneath the rock seaweed, you'll find large slices of sweet pork belly chashu (braised pork) with less fat, seasoned bamboo shoots (menma), and chopped onions. The iwanori topping is said to have originated and spread from the "Ramen Jun" lineage in Niigata. The Chuka Soba (¥990) offers a classic, simple composition, while the Jiro-inspired (Jiro-kei) Junjiro Ramen (¥1340) is a dream dish for many, loaded with vegetables, offering a sense of indulgence, and topped with a soft-boiled egg (ontama). 1Before entering
Ramen Jun Kamata is the first Tokyo branch (opened June 2005) of Sakamen-tei "Ramen Jun", which popularized Niigata Tsubame-Sanjo style back fat soy sauce ramen in Tokyo, located a 5-minute walk from the JR Kamata Station East Exit. Open continuously from 10:00 to 24:00 from Monday to Thursday and Sunday, and from 10:00 to 1:00 AM the next day on Friday and Saturday, making it convenient for late-night visits. It tends to get full near lunchtime; there are examples of being seated without a wait with 60% capacity at 7:30 PM on a weekday, and no wait after 11:00 PM on a Saturday night, indicating relatively shorter queues in the competitive Kamata area.
2Purchasing meal tickets and ordering
Upon entering, buy your meal ticket at the ticket vending machine located at the entrance. As it's open all day and not a shop where queues are constant, if there's no line, proceed to an empty seat after purchasing your ticket. If there happens to be an outside queue, it is safer to observe the end of the line and decide whether to join the queue first or buy your ticket first. The vending machine accepts e-money and QR codes, and cash is also usable (credit cards are not accepted). The main menu includes the signature Iwanori Ramen (1280 yen), the classic Chuka Soba (990 yen), Jiro-inspired Junjiro Ramen (1340 yen, with soft-boiled egg), Marutoku Ramen (1280 yen), Spicy Negi Ramen, Spicy Miso, and Abura Soba. A unique feature is selecting the amount of back fat (abura) in 5 levels on the vending machine: Ko-abura (less), Standard, Chu-abura (1.5x), Dai-abura (2x), and the specialty Oni-abura (4x). Up to the third level, Chu-abura, is free, while Dai-abura and Oni-abura incur an additional charge. Similarly, the amount of chopped onion can be selected as Standard or Oome (more) when purchasing the ticket (free). Noodle firmness can also be selected at the vending machine stage.
3Seating and receiving
The space is long and narrow with only 16 counter seats. Staff will guide you to your seat and you hand them your meal ticket. Service is speedy, typically 5-10 minutes, with an emphasis on quick turnover. You can witness the back fat "chaccha" performance right in front of you when your order is served. There are times when foreign staff are present.

On the table, you'll find grated garlic (ninniku), yuzu kosho, white pepper, black pepper, ichimi togarashi (chili powder), and men-dare (noodle sauce). The signature soup is a Tsubame-Sanjo style, a niboshi-rich (dried sardine) soy sauce base combined with onion and iwanori (rock seaweed), featuring thick, slightly wavy white noodles (similar in thickness to udon) with a chewy texture. The chashu is fatty and sweet pork belly. The oceanic flavor of the iwanori intertwines with the noodles and soup. The back fat is light and sweet, not as heavy as it looks. Ramen Jun also has its main store in Niigata Tsubame-Sanjo and a branch in Kameido, Tokyo.
