1Before entering

This is a street-level shop located along Miyakojima-dori, about a 2-minute walk from Nakazakicho Station on the Osaka Metro Tanimachi Line, and about a 13-minute walk from Hankyu Umeda Station. Operating hours are split into two shifts (Mon, Tue, Thu, Fri, Sat, Sun 11:00-14:30 / 18:00-22:00), closed on Wednesdays. Temporary closures are announced on their official SNS. On weekdays after 13:00, there may be a wait of about 5 minutes; on Sundays around 19:30, there may be 8 people waiting outside and a wait time of 20 minutes. It is relatively easier to get in just before 14:00 on weekday afternoons or around 11:00 on Sunday mornings.

2Purchasing meal tickets and ordering

After entering, purchase your meal ticket at the ticket machine immediately inside the entrance. The buttons do not have photos or English displays, so you need to remember the menu names and select them on the screen. The signature dishes are the rich Paitan ramen featuring plenty of mackerel, "Saba Paitan Ramen" (950 yen, special 1,500 yen), and the #1 popular "Special Seafood Mazesoba" (1,300 yen). The Mazesoba combines flat, extra-thick "Wing Noodles" (special W-shaped cross-section) with a rich seafood soy sauce tare, featuring block-cut rare chashu as the star. Payment is cash only; credit cards, e-money, and QR payments are not accepted.

3Seating and serving

There are only 8 counter seats (operated with increased spacing from 10 to 8 seats due to COVID-19 measures). After handing your meal ticket to the staff, you will be guided to your seat, and serving takes approximately 5-10 minutes. For Mazesoba, the meal begins by performing "tenchi-gaeshi" (flipping the noodles) to mix the noodles and tare immediately after it's served. Saba Paitan Ramen has a highly viscous soup; when scooped with a ladle, a thick liquid is lifted.

4Other

On the table, there are various flavor-changing items such as yuzu vinegar, ichimi chili powder, black pepper, and chili oil. For Mazesoba, adding yuzu vinegar after eating more than half enhances the freshness, and changing the impression with the last few bites is a classic way to eat it. For Saba Paitan, adding white rice (150 yen) to the soup to finish it risotto-style is a popular eating method spreading by word of mouth. The main branch is in Awaza, where they offer different dried sardine (niboshi) based menu items.
