1Before entering

This is a Jiro-style inspired shop located a 5-minute walk from JR Kamata Station West Exit (along the Tamagawa Line, 1F of Pub Seven). It's part of the same group as "Miyamoto," a niboshi tsukemen shop in Kamata, and is a highly-rated Jiro-style establishment. Business hours are split into lunch and dinner (11:00-15:17 / 17:30-21:00) from Monday to Saturday, closed on Sundays. Although Kamata is a competitive area, the wait is usually short. During weekday lunch or dinner, it's often possible to enter without a wait, but on Saturday lunch, holiday lunch, or special menu days, it can be full or have a wait of about 10 minutes.

2Purchase meal ticket and order

Enter the shop and buy a meal ticket from the vending machine near the entrance. While queues are not very common during peak hours, if there is a line, it is safest to observe the end of the line to decide whether to join the queue first or buy a ticket first (if the counter is full and you are waiting for a table, hand over your meal ticket before waiting). The signature item is Regular Ramen for 1000 yen. Other menu items include Mini, Soupless, Tsukemen (Dipping Noodles, dinner only), Shrimp Ramen (Soy Sauce / Salt / Spicy, with shrimp oil), Taiwan Mazesoba, and daily special menus (such as Curry Menman, Nishi-Kamata Jang-men, Pork Belly Bean Sprout Ankake-men). Toppings include quail eggs, raw egg for 80 yen, seasoned back fat (ajitsuke abura) for 100 yen, cheese, and rice. Extra noodles (raw +100g) are free. The vending machine accepts cash only; QR codes, electronic money, and credit cards are not accepted. It cannot use new 1000 yen bills or new 500 yen coins, so it is safest to prepare old bills or 100 yen coins.

3Seating and receiving

There are 11 counter seats and also table seats. Staff will guide you to your seat, where you hand over your meal ticket. At this time, you tell the staff your Jiro-style verbal customizations (call): choose from mashi (more), futsu (regular), sukuname (less), or nashi (none) for four items: yasai (amount of vegetables), ninniku (with or without garlic), abura (amount of back fat), and karame (richness of flavor). If you say "futsu", it will be served with yasai, ninniku, and abura. Mashi-mashi (double) is not available. Preparation usually takes about 4 to 10 minutes.

4Other

The soup is soy sauce-based, ranging from clear (non-emulsified) to slightly emulsified, with a sharp taste. It is characterized by the sharp saltiness of the tare (sauce) and rich pork broth, offering a wide range of flavors depending on the tuning. The noodles are homemade flat, extra-thick noodles, a hallmark of the group, with a firm, chewy texture and strong wheat aroma. The pork (chashu) is a specialty of the Miyamoto group, highly regarded among Jiro-style inspired shops for its thick-cut, moist, and juicy preparation. Seasonings like garlic mayonnaise (garimayo), pepper, and chili pepper are available on the counter to customize the taste. The shop moved from Shin-Koiwa to Kamata and keeps regulars engaged with a constant rotation of special menus.
