Ramen Mugyu Vol.1
ラーメンムギュ VOL.1本店
Overview
Ramen Mugyu VOL.1 Honten - Shoyu This popular ramen shop is located in a competitive ramen hotspot right near Enmachi Station. Their signature dish is "Onibara," featuring chicken soup made from whole purebred Nagoya Cochin chickens, topped with Kyotamba Kogen Pork belly chashu that covers the entire bowl. They offer three highly acclaimed main types: "White" (light), "Black" (rich and deeply flavored), and "Rich Chicken Soba." The noodles are thin, straight noodles from Kyoto's long-established "Menya Teigaku," which pair excellently with the soup. The shop also offers a variety of satisfying side dishes, such as "Kogemashi" (rice grilled in a stone pot) and "Aemen" (seasoned extra noodles for refilling). The touch-panel ticket vending machine supports English, making it easy for tourists to order. With its bright atmosphere, the shop attracts many international and female customers. Its convenient location also makes it a great stop on the way to or from sightseeing spots like Kinkakuji Temple and Arashiyama.

1Before Entering
A corner of a ramen battleground area, a 2-minute walk from JR Enmachi Station, slightly north of the Nishinokyo Enmachi intersection. Adjacent is "Menya Gokkei Enmachi-ten," "Yamazaki Menjiro" is across the street, and "Kirameki no Tori" and "Tantanmen Ebisu" are also nearby, attracting many customers who visit multiple shops. Open continuously from 11:00 to 22:00. As holidays are irregular, it is recommended to check the official Instagram (@ramen_mugyu) for daily operating status before visiting. On weekday afternoons and Friday evenings, entry is often possible with a short wait, but on weekends and evenings, waits of 20 minutes or more can occur.
2Purchasing Tickets and Ordering
There is a touch-panel ticket vending machine at the entrance, with photo displays and English support, making it easy for first-time foreign visitors to use. The three main signature dishes are "Onibara Shiro" (light-bodied, pure Nagoya Cochin chicken broth + light soy sauce), "Onibara Kuro" (same chicken broth + rich dark sauce), and "Noko Torisoba" (rich chicken paitan style), all generously topped with sliced Kyotamba Kogen Pork chashu. Side dishes include "Kogemeshi" (crispy rice), "Aemen" (mixed noodles), "Mugyu Don" (Mugyu bowl), "Wonton," "Fried Chicken," and more. Payment is accepted by cash and QR code payment (PayPay); credit cards and e-money are not accepted.
3Seating and Receiving Your Order
Total of 15 seats: 7 counter seats and one large table for 8 people. Staff will guide you to an empty seat, and your ramen will be served approximately 5 minutes after handing over your ticket. The chashu is sliced while being seared in front of you, creating an aromatic presentation when served.
4Other Notes
Adding the "Karamiso Ninniku" (spicy miso garlic) from the table instantly boosts the flavor of the Onibara series. For "Kogemeshi," it's recommended to sizzle it in a stone bowl to create crispy rice, and you can also enjoy it by soaking it in ramen broth at the end, like ochazuke. "Aemen" (mixed noodles) is an extra order like kaedama (extra noodle), but the noodles are switched to thin noodles and seasoned with a separate sauce, allowing you to enjoy a different flavor from your first bowl. If you plan to eat at multiple shops in the Enmachi ramen battleground, it's classic to start with the relatively lighter Onibara Shiro at Mugyu.

Miso Mendokoro Tasakaya (Ikebukuro): Navigating the Japanese-Only Ticket Machine and a Review of its Robust Miso Ramen
Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot). This guide, based on our visit on Friday, May 22, 2026 (arrived at 6:39 PM with a 13-person queue), provides photos and tips for first-time visitors to Japan. We'll cover how to navigate the Japanese-only, no-photo ticket vending machine using a color guide, understand the queuing situation (only 9 counter seats and long noodle cooking times mean slower turnover), tips to avoid crowds, and the cash-only payment policy.

Ramen Jiro "Kabuji" (Shinjuku-Kabukicho): The Complete Guide to Jiro Calls and Timing
Just a 1-minute walk from Seibu-Shinjuku Station North Exit, Ramen Jiro Shinjuku-Kabukicho, affectionately known as Kabuji (a nickname combining Kabukicho + Jiro), is the fourth oldest chokkei (direct-lineage) shop of the Ramen Jiro chain. Its late-night hours from 11:30 AM to 2:30 AM (Mon, Tue, Thu-Sun, closed Wed) are a unique advantage among chokkei shops, making it ideal for combining with Kabukicho sightseeing or as a late-night ramen after drinks. With its semi-emulsified pork-bone shoyu broth, homemade flat thick wavy noodles, unique call (shouted topping order ritual) culture (Ninniku (raw grated garlic), Yasai (boiled bean sprouts on top), Abura (solid back fat for richness), Karame (extra soy tare for stronger salty taste), Mashi (more, about 1.5×), Sukuname (less, about half)), the chokkei system of ticket-folding (a wordless system to request firmer or softer noodles by folding the meal ticket) to specify noodle hardness, lot system (a Jiro-specific eating rhythm where the same batch of customers finish together) manners, and specific rules (no phone calls, no photography except ramen, no drunken entry), this article provides a complete guide based on our visit on May 15, 2026, where we ordered a Small Ramen (¥950) with the call 'Ninniku Sukuname, Yasai, Abura'.
