Ramen Nagi Butao Shibuya
ラーメン凪 豚王 渋谷本店
Overview
Ramen Nagi Butao Shibuya Honten is located on the 1st floor of Caminito at Higashi 1-3-1, an 8-10 minute walk from the JR Yamanote Line Shibuya Station South Exit East. As a specialized tonkotsu (pork bone) ramen establishment from "Nagi," renowned for its niboshi (dried sardine) ramen, it carries on the legacy from the Shinjuku Golden Gai main store, standing as one of Shibuya's representative tonkotsu ramen shops. Its greatest feature is the rich tonkotsu soup, slow-cooked for over 20 hours. While suppressing the characteristic odor of tonkotsu, it maximizes the inherent umami and richness of pork, resulting in a creamy flavor. The extra-thin straight noodles firmly carry the soup, and their texture, allowing the aroma of wheat to waft through the nose, is a unique composition found only here. Beyond the signature "Butao" (Pork King, the basic ramen), the menu's appeal lies in its four unique flavor variations, including "Kuro-o" (Black King), which features ma-yu (black garlic oil), and "Aka-o" (Red King) for a spicy kick. Furthermore, it offers a full customization experience where you can specify noodle hardness (Barikata/very firm, Kata/firm, Futsu/normal, etc.), flavor intensity, richness level, amount of garlic, and spice level using a customization sheet. This setup makes it familiar even to those experienced with Ie-kei (Yokohama-style Tonkotsu Shoyu) or Jiro-kei (Jiro-style) ramen. The tables are equipped with chopped garlic, karashi takana (spicy mustard greens), and beni shoga (red pickled ginger), allowing you to enjoy flavor variations (ajin-hen) by combining them with your ramen, kaedama (noodle refill), or han-rice (half-rice). Its convenience, operating until late at night, makes it a popular choice for a late-night meal after drinks (shime) or for replenishing energy late at night. Due to its location, a short walk from the station, you can enjoy a peaceful meal by avoiding peak hours.
How to Order
1Before entering
Located on the 1st floor of Caminito Building at Higashi 1-3-1, an 8-10 minute walk from JR Yamanote Line Shibuya Station South Exit to Shibuya Police Station direction. Open for extended hours: Mon-Sat 10:00-22:30, Sun/Holidays 10:00-20:00. Due to its slightly off-station location, it's often possible to be seated without waiting even around 8 PM on weekdays, allowing for a relaxed meal outside of peak hours.
2Purchasing meal tickets
There's a ticket vending machine outside the shop; purchase your meal ticket there before heading to a seat. The vending machine is in Japanese only, but inside, a customization sheet is provided (select 5 items: richness of flavor, richness of broth, garlic, spiciness, noodle firmness), also in Japanese only. Signature items include Butao Ramen for 850 yen, Tokusei Ramen for 1030 yen, Negi Ramen for 970 yen, Kuro-Oh (black garlic oil, squid ink), Aka-Oh (spicy), Kaedama (extra noodle) for 100 yen, and Half Rice for 150 yen. Noodle firmness can be specified in detail, such as barikata (very firm), kata (firm), and futsu (regular), offering an authentic experience. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and receiving your order
The shop has 28 seats (counter and table). If there are empty seats, you will be guided in order, and you convey your customization choices orally when handing your meal ticket to the staff.
4Other information
As a tonkotsu specialty brand by "Nagi," known for its niboshi ramen, the highlight is the rich tonkotsu broth simmered for over 20 hours. While suppressing the characteristic smell of tonkotsu, it brings out the inherent umami and richness of pork in a creamy flavor, with extra-fine straight noodles that perfectly carry the soup. The table condiments include chopped garlic, karashi takana (spicy mustard greens), and beni shoga (red pickled ginger), which are popular for changing the flavor or enjoying with rice as a finishing touch. Besides "Butao (basic)", you can choose from four unique flavors, such as "Kuro-Oh" with black garlic oil and "Aka-Oh" for spiciness. All five items (noodle firmness, richness of flavor, richness of broth, amount of garlic, and level of spiciness) can be customized, making for an enjoyable experience even on multiple visits.
