Ramen Seisakujo Kanade
らーめん製作所 奏
Overview
Located discreetly on the first floor of a residential apartment building in Inari, just a 3-minute walk from JR Namba Station, this popular shop offers meticulously crafted bowls imbued with the chef's artisan spirit. Setting itself apart from the bustling tourist ramen spots in the Namba area, it stands as a hidden gem, cherished by local patrons and ramen enthusiasts from afar. The menu's two main pillars are the "Chicken and Seafood Ramen" and the "Chicken and Seafood Shoyu Mazemen". The Chicken Ramen features a complex flavor profile where chicken umami forms the base, with seafood umami rising in the aftertaste. Its profound depth of flavor, achieved without artificial additives (mukacho), suggests the meticulous calculation worthy of the shop's name, "Seisakujo" (workshop/factory). The noodles are slightly thin and straight, designed to complement the richness of the paitan shoyu broth. A finishing touch of lightly sprinkled bonito flakes (katsuobushi) adds a subtle Japanese accent. The "Kanaderu Mazemen" is the shop's other star, appealing with the chewy texture of its flat, medium-thick noodles and a choice of flavors: Tantan, Curry, or Aburi Chashu. A favorite among regulars is to finish the meal by adding dedicated rice (+50 yen) to the remaining sauce. It's an elegant mazemen that, despite lacking a 'junk food' feel, delivers immense satisfaction. For those choosing Tantan, adding sansho pepper powder from the table instantly amplifies the numbing (shibire) sensation and umami, a highly recommended method by repeat customers. Grated garlic, vinegar, white pepper, and mazemen-specific fried garlic are not kept on the tables; the staff handles them individually upon request, ensuring polite service. While its first-floor apartment location might be a bit hard to find, its proximity to JR Namba Station offers the unique appeal of 'encountering artisan craftsmanship right in the heart of a tourist district'.
How to Order
1Before Entering
A small ramen shop located on the first floor of an apartment building in a residential area, a 3-minute walk from JR Namba Station South Exit. Open Monday-Saturday in two shifts (Mon/Wed/Thu/Fri: 11:00-15:00 / 17:15-21:00, Tue: 11:00-15:00, Sat: 10:30-15:00), closed Sundays. The exterior is modest as it's on the first floor of an apartment, so look for the shop name sign on your first visit. There are only 7 counter seats, so seating is limited. During peak hours, a few people may wait outside, but turnover is quick, allowing entry in about 10-15 minutes.
2Purchasing Meal Tickets / Ordering
Purchase meal tickets from the vending machine immediately upon entering. The vending machine has no English or pictures, and all menu names (e.g., Tori to Gyokai no Kanade Ramen, Kanaderu Shoyu Ramen, Tori to Gyokai Shoyu no Kanaderu Maze-men) are in Japanese only. It's best to decide on your menu in advance. For Tantantan Maze-men, which is cash-only, you need to tell the staff separately. The two main pillars are "Gyokai to Tori Ramen" (Paitan Shoyu, around 1050 yen) and "Tori to Gyokai Shoyu no Kanaderu Maze-men" (1300 yen), with Maze-men available in Chashu, Curry, or Tantantan flavors. QR payment (d払い, Rakuten Pay, au PAY) is accepted, but credit cards and e-money are not.
3Seating & Receiving Your Order
The staff will guide you to your seat; take your seat and hand them your meal ticket. Your order will be served in about 10 minutes, a meticulously prepared bowl from the kitchen where you can watch the cooking process. The interior is thoroughly cleaned, providing a comfortable and hygienic space.
4Other Notes
Grated garlic, vinegar, white pepper, and fried garlic specifically for maze-men are not on the tables. The staff will politely provide them individually upon request. For maze-men, the standard way to finish the meal is to add dedicated rice (+50 yen) to the remaining sauce, allowing you to enjoy a fragrant flavor. For Tantantan Maze-men, adding sansho pepper powder makes it even more compatible, a highly recommended way to eat it among repeat customers.
