Ramen Seisakujo Kanade
らーめん製作所 奏
Overview
Tucked away on the first floor of an apartment building in a residential area, a short distance from JR Namba Station, this small ramen shop features just 7 counter seats. Their signature dish is a W-soup ramen, a blend of seafood and chicken, offering an elegant bowl fragrant with bonito flakes. Despite being additive-free (Mujocho), it boasts a deep, complex flavor, delivering a light yet substantial umami. Their mazesoba (mixed noodles) comes in three varieties—Tantan, Curry, and Seared Chashu—and can be enjoyed all the way through to adding rice at the end. While its hidden, hard-to-find location gives it a secret hideaway feel, it's a truly reputable establishment known to those in the know. Since the ticket vending machine has no photos or English descriptions, and seating is limited, it's highly recommended to do some research before your visit.

奏でる醤油らーめん(魚介)をいただきました。黒めのビジュアルにほんのり甘いタレに歯切れのよい細麺を合わされていてとっても美味しゅうございました。
