Ramen Shichisai Hanten is a new ramen shop concept fully produced by Menya Shichisai, a super famous restaurant in Hacchobori, Tokyo, located in Yaesu Underground Shopping Mall "Yaechika" Yaesu Underground Street No. 2, Tokyo Station. The main branch, Menya Shichisai, is a regular on the Michelin Bib Gourmand list and Tabelog's Top 100 Ramen Shops, known for its unconventional style of kneading, cutting, and boiling noodles only after an order is placed. Inheriting the brand of the main branch, this sister shop opened in 2023 as a more casual dining option directly connected to Tokyo Station's Yaechika, earning a high rating in Tabelog's TOP5000. The signature dish is "Kitakata Ramen" (1,000 yen), available with a choice of three soups: soy sauce, salt, or dried sardine (niboshi). The noodles are hand-kneaded, flat, medium-thick, wavy, multi-hydration noodles, made to order, blending domestic wheat varieties such as "Haru yo Koi," "Kitahonami," and "Yumechikara" with "Mochihime" mochi wheat as the base. It's a unique evolutionary form, often described as "NEO Kitakata Ramen," differing from authentic Kitakata Ramen, offering a delightful double texture of chewiness and slipperiness that generously carries the soup. The clear, light-bodied soup, prepared with a double broth of animal and seafood ingredients, is additive-free and characterized by a rich yet mellow soy sauce flavor. The presence of two types of chashu (chicken and pork), with a default of four slices, is a welcome topping. Popular sub-menus include "Aburasoba" (oil noodles) in three varieties (soy sauce, salt, or dried sardine), "Special Niboshi Aburasoba," and the shop's hidden gem, "Spicy Tsukemen" (1,100 yen). The Spicy Tsukemen is a unique dish inspired by Ogikubo's "Maruchō," a junk-food-style bowl that stimulates the palate without unifying its elements: crunchy black pepper so intense it grates when slurped with a spoon, the numbness of sansho pepper, and a sweet and spicy rich sauce with heavy oil. 1Before Entering
Located 3-4 minutes walk from Tokyo Station Yaesu Central Underground Exit, on Yaechika Yaesu Underground Street No. 2 (area close to Artizon Museum). Open year-round (except for facility closing days during New Year's holidays) from 10:30 AM to 10:00 PM without breaks. Due to its location in the innermost part of Yaechika, there are fewer queues compared to other shops even on weekday afternoons, and it's often a hidden gem where you can get in without waiting after 1 PM on weekdays or during evening hours. There's also a happy hour service from 3 PM to 7 PM on weekdays where alcoholic drinks are 300 yen.
2Purchasing Meal Tickets and Ordering
There's a high-tech, touch-panel ticket machine outside the shop with photos and English support. First, choose from 6 types of noodles, such as "Kitakata Ramen" and "Aburasoba" (each available in soy sauce, salt, or dried sardine), "Spicy Tsukemen," "Special Niboshi Aburasoba," "Nikusoba," and "Wantansoba." Then, select "Yakimeshi" (regular or half size) and "Toppings," a three-step process. You can also choose noodle portion sizes: default 200g, large 300g (+100 yen), or extra-large 400g (+200 yen). Pre-purchase: Purchase your meal ticket at the machine before joining the back of the queue. Besides cash, various credit cards (VISA/Master/JCB/AMEX/Diners), transportation IC cards, and WAON are accepted (QR code payments are not accepted).
3Seating and Receiving Your Order
A total of 20 seats, comprising 8 counter seats and 3 tables for four. Staff will guide you to an available seat. Preparation of hand-kneaded noodles takes some time, but less than at the main branch, with dishes usually served within 5-10 minutes of ordering. Paper aprons are provided, allowing you to enjoy your tsukemen or ramen without worrying about your clothes.
4Other
Chili oil and pepper are available on the table, and especially for Spicy Tsukemen, it's already stimulating enough as is. The "Yakimeshi with egg yolk" (Kimi no Se) is a signature side, and the classic way to eat it is by dipping it halfway into the ramen soup. There's also a wide variety of topping options, allowing for free customization to your liking. Information on temporary closures is announced on the official Instagram.
