Ramen Sou Chikyukibo de Kangaero
ラーメン荘 地球規模で考えろ
Overview
Ramen-so Chikyu Kibo de Kangaero (Think on a Global Scale) is a popular Jiro-kei style ramen shop in Fushimi, Kyoto, and is part of the same lineage as Nagoya's famous 'Rekishi wo Kizame'. The shop operates in a two-part system for lunch and dinner from Wednesday to Saturday, and continuous lunch service on Sunday. It is closed on Mondays and Tuesdays. Since temporary closure information is posted regularly on the official X (formerly Twitter) account '@chikyu_kibo', it's recommended to check before visiting. The signature dish is a hearty Jiro-kei style ramen, an impressive bowl featuring a rich broth with a strong soy sauce flavor, a powerful trio of pork bone, back fat, and garlic, chewy and robust homemade extra-thick flat wavy noodles, thick and melt-in-your-mouth chashu, and a mountain of bean sprouts and cabbage. To order, purchase a meal ticket from the vending machine before lining up, and make a 'call' (a unique practice of verbally specifying the desired amounts of garlic, vegetables, pork fat, 'karame' (extra seasoning), and chili pepper before sitting down). Don't worry if it's your first visit; the staff will provide a paper guide and explain it carefully. Noodle portions range from 'small of small' (150g) to regular (300g), with plenty of options like soup-less ramen ('Jiru-nashi') and 'Gyokai Kibo' (seafood scale). Limited-time menu items (such as 'Red Meteor', 'Salt Green Onion', 'Pulled Pork Curry Flavor', and 'Winter Miso') are also popular. There's a rule to only join the queue once everyone in your party has arrived, and there are no coin parking lots nearby for those coming by car. Payment is cash only.
