Ramen Sugimoto Marunouchi
らぁ麺すぎ本 丸の内店
Overview
Raamen Sugimoto Marunouchi, which opened in January 2025 on the B1F of Marunouchi Brick Square, is the second store and flagship location of the renowned "Raamen Sugimoto" main branch in Aoba-dai, Yokohama. The main branch is run by Kosuke Sugimoto, the last disciple of the late Minoru Sano (Shina Soba-ya), legendary as the "Ramen Demon." It has a distinguished record, including being featured in the Michelin Guide Tokyo Bib Gourmand for four consecutive years, ranking 3rd in the TRY Ramen Awards, and being continuously selected for Tabelog's Top 100 Ramen Shops, making it a leading name in Tokyo's shoyu and shio ramen scene. The owner intentionally used hiragana for "Sugimoto" in the shop name, retaining the kanji "本" (hon) both to convey a "soft image" and out of respect for the highly regarded "Menya Honda." The signature "Shoyu Raamen" (Soy Sauce Ramen, 1,200 yen) features a broth that harmoniously blends chicken, pork, seafood, and vegetables with a 'kaeshi' (sauce base) uniquely blended from five types of carefully selected raw soy sauces from breweries across Japan. The clear, brownish soup, as you drink it, reveals layers of soy sauce aroma and dashi umami, embodying a "flavor you won't tire of even if you eat it daily" with a gentle elegance that doesn't push the saltiness forward. The noodles are homemade thin noodles made from four types of wheat flour plus whole wheat flour, characterized by a unique texture with a time lag between the elasticity of the surface and the softness of the interior. It comes with three slices of chashu, precisely cooked at a low temperature to a pink cross-section, showcasing meticulous heat management. The other signature dish, "Shio Raamen" (Salt Ramen, 1,200 yen), is a salt-based soup centered on salted chicken, combined with seafood dashi from shrimp, oysters, and clams, and has a track record of winning first place nationwide in the salt flavor category. The bowls are custom-made Arita-ware exclusively for the Marunouchi branch, inheriting the main store's commitment to quality while adding a sophistication befitting its station-front location. The popular "Tamago Kake Gohan" set (Soy Sauce Ramen + Egg over Rice, 1,600 yen) is a popular side dish featuring Nagoya Cochin egg and a mountain of bonito flakes with a rich sauce, and its deliciousness is further enhanced by pouring ramen broth over it to change the flavor.
How to Order

1Before Entering
Located about 3 minutes walk from Tokyo Station, on B1F of Marunouchi Brick Square. As it is in the basement of a commercial complex next to the Mitsubishi Ichigokan Museum, the entrance can be easily missed on a first visit. During weekday lunch peaks, there's often a line, but weekday evenings around 5 PM and weekend afternoons before 4 PM are relatively easier times to visit. The shop is open daily except for January 1st and legal inspection days, with continuous operation from Mon-Sat 11:00-23:00 and Sun/Holidays 11:00-22:00, making it convenient to stop by during business trips or shopping.
2Purchasing Meal Tickets / Ordering
Immediately to the right upon entering, there is a touch-panel ticket vending machine (you may also be guided to order via tablet). It features photos of the signature "Shoyu Raamen" (Soy Sauce Ramen) and "Shio Raamen" (Salt Ramen), toppings such as Tokusei (Special), Ajitama (Seasoned Egg), and Wonton, side dishes like "Tamago Kake Gohan" (Egg over Rice) and "Chashu Gohan" (Roast Pork over Rice), Tsukemen (Dipping Noodles), and Honke Size (Main Store Size, a juicier version for +200 yen). Advance purchase: Buy your meal ticket before joining the end of the line. Payment options include cash, various credit cards, electronic money such as transportation IC cards, iD, QUICPay, and QR code payments like PayPay / d払い.
3Seating / Receiving Your Order
The setup includes 9 counter seats and 4 tables, accommodating groups. After being seated, guests self-pour cold barley tea from a pot on the counter into the teacup provided at the seat. Orders are served in about 10-15 minutes. The bowls are custom-made Arita-ware exclusively for the Marunouchi branch, arranged neatly on a tray when served.
4Other
Flavor-changing condiments on the table are minimal; the basic approach is to first enjoy the designed balance of soy sauce and dashi. The "Tamago Kake Gohan" (Egg over Rice) side, made with Nagoya Cochin egg, is a popular combination, allowing for a flavor change by pouring ramen broth over it. The Honke Size (Main Store Size, +200 yen) is a larger, juicier portion with increased volume for both noodles and soup. Information on temporary closures is announced on the official Instagram.
