Ramen Takanome Kamata
ラーメン 鷹の目 蒲田店
Overview
Ramen Takanome Kamata Store is a Jiro-inspired (a ramen style known for large portions, rich broth, and specific toppings) shop that opened in April 2019, a 3-minute walk from JR Kamata Station South Exit, behind the Yuzawaya Main Store. The main branch, established in 2015 in front of Dokkyo University in Saitama, is a popular establishment, and the Kamata store is its second branch. The chain currently operates 9 stores (Kawaguchi, Omiya, Kita-Senju, Meidai-mae, Nishi-Sugamo, Toyocho, Ekoda, Kamata) and boasts a lineage as a sister store to "Senrigan," a famous Jiro-kei (Jiro-style ramen) shop established in 2009 in Komaba, Meguro-ku. Signature items include Ramen Small for 1100 yen (300g) and Mazesoba (mazesoba, soupless ramen) Small for 1130 yen. The noodles are house-made, extra-thick flat noodles with a chewy, robust "washi-washi" texture. You can choose from Mini 200g, Small 300g, or Large 400g (+100 yen) portions. The soup is an emulsified (nyuka-kei) sweet and rich broth, characterized by its mild and easy-to-drink finish for a Jiro-kei, achieving a balance often praised as an approachable entry point to Jiro-style ramen. It has a thick richness without being overly heavy, and the sweetness of the extra-thick noodles and abura (pork back fat), along with the spicy kick of karaage (spicy fried tempura bits), brings the overall flavor into sharp focus. The chashu (braised pork) is a thick-cut, melt-in-your-mouth "Kami-buta" (Kami-buta, literally "God Pork," a term of praise for exceptional chashu) that requires no chewing and dissolves in your mouth, a signature-level texture. The greatest distinguishing feature is the complimentary toppings of Karaage (karaage, spicy fried tempura bits) and Gari-mayo (gari-mayo, garlic mayonnaise), which are traditions passed down from Senrigan. These are unique elements not often found in many Jiro-inspired shops, where the spicy kick of karaage and the rich flavor of gari-mayo create layers of umami with the Jiro-kei essence. Monthly limited menus are a highlight, such as April's Mentaiko Butter (butter + mentaiko + perilla leaf + lemon + nori, like a Japanese-style mentaiko pasta), March's Carbonara (an adventurous take with grated cheese + pizza sauce), TKM (Tamago Kake Men / egg over noodles), and various tomato-based options, all designed to keep regular customers excited. The Jiro-style verbal "kōtō call" (kōtō call, for verbal ordering of toppings like yasai/vegetables, ninniku/garlic, abura/pork back fat, karaage/spicy tempura bits, gari-mayo/garlic mayonnaise) is used: simply tell the staff your preference when they confirm your order just before serving. You can adjust quantities with "mashi" (extra), "mashi-mashi" (double extra), "choi-mashi" (a little extra), "sukuname" (less), or "nashi" (none). For limited menus, additional calls for toppings like perilla leaf or lemon may be available, and gari-mayo can be served on a separate plate. Table condiments like pepper, vinegar, chili pepper, and pizza sauce (during limited menus) are available to enjoy flavor changes (ajiken). Sometimes, a quail egg is offered as a follower service, demonstrating their commitment to repeat customers. Open from 11:00-15:00 and 17:00-23:00, it's also a convenient option for late-night dining.

1Before entering
Ramen Takanome Kamata Store, a Jiro-inspired shop, opened in April 2019, a 3-minute walk from JR Kamata Station South Exit, behind Yuzawaya Honten. The main store, founded in 2015 in Dokkyo University Mae, Saitama, is a popular establishment, and Kamata Store is its second location. The chain currently operates 9 stores (Kawaguchi, Omiya, Kita-Senju, Meidaimae, Nishi-Sugamo, Toyocho, Egota) and boasts a lineage as a sister store to "Senrigan," one of the most famous Jiro-style shops founded in 2009 in Komaba, Meguro-ku. Operating hours are Mon-Sun 11:00-15:00 / 17:00-23:00 (with a break in between). Although popular, the Kamata store has relatively good turnover; at 11:30 on weekends it's 40% full, no wait around 17:45 or 19:00 on Saturdays, immediate entry just after opening at 11:00 on weekdays, and a queue of 2 people around 21:00 on weekdays, often allowing quick entry if you avoid peak hours. The monthly limited-time menu changes at the end of the month, so if you have a specific one in mind, it's best to check the latest information beforehand.
2Purchasing meal tickets and ordering
Purchase a meal ticket from the vending machine at the store entrance. The vending machine accepts cash only; electronic money, QR codes, and credit cards are not accepted. Signature items include Ramen Small (300g) for 1100 yen, Mini (200g), Mazesoba Small for 1130 yen, and limited-time menus (monthly changes: Mentai Butter, Carbonara, TKM, etc. for 1350 yen). Toppings include extra pork (butamashi), seasoned egg (ajitama), raw egg (nama tamago), and rice. Choose your noodle portion size from standard (300g), mini (200g), or large (400g, +100 yen); for limited-time menus, tell the staff your noodle portion when submitting your ticket. Special paid toppings for limited-time menus, such as pizza sauce, change monthly.
If there is a queue, the operation is fluid, so it is safest to observe the end of the queue and decide whether to join the queue or buy a ticket first.
3Seating and receiving
There are 12 counter seats, and staff will guide you to a seat. Just before serving, staff will ask "Customer number ○, what are your toppings?" to take your Jiro-style verbal customizations. You can state up to 5 types: ヤサイ (yasai, vegetables), ニンニク (ninniku, garlic), アブラ (abura, back fat), 辛揚げ (karaage, chili-fried tempura bits, from Senrigan), ガリマヨ (gari-mayo, garlic mayo, from Senrigan). Items not requested will not be included. You can adjust the quantity with マシ (mashi, more), マシマシ (mashi-mashi, double), ちょいマシ (choi-mashi, a little more), 少なめ (sukuname, less), or なし (nashi, none). For limited-time menus, special additional calls (Ooba, Lemon, Gari-mayo, Karaage) are available, and Gari-mayo can be served on a separate plate.
4Other
The soup is an emulsified, sweet and savory type, characterized by a mild and easy-to-drink finish for a Jiro-style ramen. It has a thick richness but isn't too heavy, making it praised as an entry point to Jiro-style ramen. The noodles are homemade extra-thick flat noodles with a chewy texture, a wheaty composition that allows you to eat them well even if you increase the portion size. The char siu is melt-in-your-mouth thick-sliced pork, called "divine pork," that requires no chewing and falls apart in your mouth, making it a signature item. The biggest feature is that the Karaage (chili-fried tempura bits) and Gari-mayo (garlic mayo) from Senrigan are offered as free toppings; the spicy kick of Karaage and the rich flavor of Gari-mayo create layers of umami with the Jiro-style taste. The monthly limited-time menus are also a highlight, keeping regulars engaged with seasonal compositions like April's Mentai Butter (butter + mentaiko + ooba + lemon + nori for a Japanese-style mentaiko pasta feel), March's Carbonara (an adventurous combination with powdered cheese + pizza sauce), and TKM (Tamago Kake Men, egg over noodles). Quail eggs may sometimes be included as a follower service.
