Ramentei Hinari Ryuou
らーめん亭 ひなり竜王
Overview
One of the restaurants in the group with "Chuka Soba WAKA TOKYO" (Chinese-style noodles) in Kitashinagawa as its main branch, this Chuka Soba (Chinese-style noodles) shop specializes in both shoyu (soy sauce) and shio (salt) ramen, nestled in a residential area of Omorinaka, Ota Ward, a 9-minute walk from Keikyu Umeyashiki Station. It has been selected as one of the Tokyo Ramen Hyakumeiten (Top 100 Tokyo Ramen Shops) and features the Waka group's signature use of ingredients—a multi-layered dashi (broth) made from Shingen chicken (Shingen-dori) bones, Iwanaka pork (Iwanaka-buta), duck bones, niboshi (dried sardines), katsuobushi (bonito flakes), shiitake mushrooms, makonbu (true kelp), and vegetables. The shoyu (soy sauce) tare (base sauce) is made in-house by heating nama-age shoyu (raw soy sauce) from Kagawa Prefecture, and the oil is chiyu (chicken oil) from Shingen chicken. The soup offers a rich umami (savory taste) of chicken and pork, followed by the deep umami of shiitake mushrooms and the aroma of konbu (kelp), resulting in a bowl with a prominent Japanese dashi (broth) essence. The noodles are homemade medium-flat noodles, a blend of Nisshin Seifun's "Waka" and Iwate Prefecture's Heiwa Seifun's "Mochihime," characterized by 40% hydration and a chewy, handmade texture. Toppings include Iwanaka pork tsurushi-yaki chashu (hanging-roasted pork slices), low-temperature cooked loin, rare slices, Shingen chicken thigh tsurushi-yaki (hanging-roasted), wontons with chicken filling wrapped in Mochihime dough, a dark-colored ajitama (seasoned soft-boiled egg) steeped in Chinese tamari soy sauce, half a shiitake mushroom, nori (seaweed), and Kujo negi (Kujo green onions). All chashu (pork slices) are prepared using methods like tsurushi-yaki (hanging-roasting) and low-temperature cooking to bring out the best of their ingredients. In addition to the signature shoyu (soy sauce) and shio (salt) ramen, the menu also offers konbu-sui tsukemen (kelp-water dipping noodles) in shoyu and shio, the limited "Trinity" (a triple soup using daily changing ingredients), and truffle-flavored tamago kake gohan (egg over rice) with chashu (availability varies).
How to Order
(Check the official account below in advance for irregular closures and updates)

1Before entering
Located in a residential area of Omori-Naka, Ota Ward, a 9-minute walk from Keikyu Umeyashiki Station and an 11-minute walk (640m) from Omorimachi Station. It's a bit of a walk from the station, and landmarks are scarce until you get close due to its residential location. Business hours are split into two sessions: 11:00-14:30 and 18:00-20:30, closing once sold out. Closed on Thursdays. Weekday lunch and dinner times are often relatively easy to enter, but on holiday afternoons, an outdoor queue of around 8 people may form between 12-13 o'clock.
2Purchasing meal tickets and ordering
There is a ticket vending machine to the left upon entering. It is Japanese only with no photos; select from menu names (Shoyu Ramen / Shio Ramen / Konbu-sui Tsukemen (Shoyu/Shio), Tokusei (Special), various toppings). Payment is cash only; credit cards, electronic money, and QR code payments are not accepted. In addition to regular items, limited menus like "Sanmi Ittai" (Triple Harmony, a triple soup with daily changing ingredients) may appear, so it's advisable to check the upper section or descriptions on the ticket vending machine. If there is a queue outside during peak times, it's safer to observe the end of the line and decide whether to join the queue or purchase meal tickets first.
3Seating and receiving
There are only 9 counter seats. Staff will assign seats. Place your meal ticket on the counter; service takes approximately 6-10 minutes. Cold water is self-service from a pitcher on the table.
4Other
Pepper is available next to the ticket vending machine on the counter, but flavor-altering condiments are minimal. The soup is highly refined, so it is recommended to taste it as is first. The Char Siu egg over rice (availability varies) is a dish fragrant with truffle oil; if you wish to add a rice dish, purchase a meal ticket for it simultaneously with your ramen.
