Overview
Santora is a specialty shop for Jun-Sumire style miso ramen, run by a master who trained for 17 years at "Sumire," a famous restaurant in Sapporo, Hokkaido. It is located in an alley a few minutes' walk from Edogawabashi Station and is known as an accomplished restaurant, having been selected for Ramen TOKYO Hyakumeiten (Top 100 Ramen Shops in Tokyo) for five consecutive years. The signature dish is miso ramen, featuring a rich and deeply flavored soup made by searing miso in a wok, with a powerful taste of garlic and ginger. A thick layer of lard covering the surface keeps the soup piping hot until the very end, so much so that caution is needed with the first bite to avoid burning. The noodles are Nishi-yama Seimen's yellow medium-thick, wavy noodles, which have a pleasant chewy texture that perfectly lifts the rich soup. The toppings include chashu, diced chashu, menma, fragrant bean sprouts stir-fried over high heat, green onions, and grated ginger placed on top of the chashu. Dissolving the ginger into the soup towards the end adds a refreshing flavor, allowing you to enjoy it without getting tired of it. Besides miso, salt and shoyu (soy sauce) ramen are also offered but are limited in quantity and often sell out quickly. It pairs exceptionally well with extra bean sprouts topping or a small serving of rice (chokotto gohan), and is praised as the ultimate form of Sapporo miso ramen.

1Before entering the shop
It is located in an alley 2-3 minutes' walk from Edogawabashi Station on the Yurakucho Line. It is a popular shop where queues are essential, often forming even before opening hours. It has irregular holidays and closes early once ingredients run out for both lunch and dinner, so it's advisable to check the operating status on in-store notices or official SNS before visiting.
2Purchasing meal tickets and ordering
Purchase meal tickets from the vending machine on the left inside the shop. Payment is cash only, and the menu is in Japanese only. If there is a queue, you can buy your meal ticket when your turn approaches and you are about to enter. The classic order is the signature miso ramen with added bean sprouts, a flavored egg (ajitama), or a small serving of rice (chokotto gohan).
3Seating and receiving your order
There are about 15 seats in total: 7 counter seats, one 4-person table, and two 2-person tables. It takes 5-13 minutes for the order to be served. The soup is extremely hot, so be careful not to burn yourself with the first bite.
4Other
The grated ginger on top of the chashu can be dissolved into the soup towards the end for a refreshing flavor change. If desired, you can request half noodles (men o hanbun, ¥200 discount), and if you find the taste too strong, you can also receive a diluted soup (wari-soup).
