The sign is not very noticeable, so first-time visitors may easily miss it. Business hours vary by day (Weekdays 11:00-15:00 / 17:00-20:10 L.O. 19:40, Saturdays 10:45-15:00 / 17:00-20:10, Sundays 10:45-15:30 L.O. 15:00), closed Mondays. Parking is available in front of the shop and behind the shop (a bit further away); the parking behind the shop can be hard to find, so checking in advance is recommended. Typical waiting times during peak hours are 20-40 minutes (e.g., 40-minute wait at 11:30 on a Saturday opening, line outside at 11:30 on a Saturday, 3-person 10-minute wait at 14:30 on a weekday, 5-10 people 20-minute wait around 11:30 on a Sunday, just barely making L.O. after 14:00 on a Sunday).

2Ordering - Verbal Orders

Staff take orders from customers waiting in line outside (no ticket machine), creating an efficient flow where ramen is served soon after being seated inside. Rule: all members of your party must be present before joining the queue. Menu: Miso 1200 yen (most popular, large size (omori) +150 yen, extra green onion +200 yen), Spicy Miso (+50 yen), Shio (Salt) 1200 yen, Shoyu (Soy Sauce) 1200 yen, Ajitama (seasoned egg) 150 yen, Takikomi Gohan (seasoned rice) 400 yen (sells out quickly), Medium Rice 130 yen (exceptionally cheap), Small Rice 80 yen. Payment: Cash only. Credit cards, e-money, and QR code payments are not accepted.

3Seating and Receiving

Clean interior with counter seats and table seats. A welcoming atmosphere suitable for solo diners or groups. Customers are guided to available seats in order. Since orders are placed beforehand, ramen is served in about 5 minutes after seating.

A renowned 'Jun-sumi' style shop, a spin-off from the highly-regarded Menya Saimi in Sapporo. Following the lineage of 'Sumire -> Saimi -> Mitsubaki', it has been continuously selected for Ramen Hyakumeiten (Top 100 Ramen Shops) in 2024 and 2025. The most significant feature is the Jun-sumi style miso soup, inherited from Saimi. The soup, generously covered with lard, emits a fragrant miso aroma and remains piping hot until the end. It boasts a deep, rich miso flavor with a subtle, sharp ginger kick, creating a profound taste that feels like Saimi's style rather than Sumire's. A common unique way to enjoy it is to gradually melt the generous amount of grated ginger placed on top of the chashu, which changes the flavor profile as you eat. Noodles are medium-thick, wavy (Morisumi Seimen, golden color, good wheat flavor), boiled firm to have a resilience that stands up to the soup. Ingredients include bean sprouts, green onions, Hokkaido pork shoulder chashu, menma (bamboo shoots), fu (wheat gluten), and kamaboko (fish cake) – a rare combination for Jun-sumi style (no stir-fried onions or minced pork). Side dishes: The Medium Rice (130 yen) and Small Rice (80 yen) are exceptionally cheap, and many customers eat them with ramen. Takikomi Gohan (400 yen) is also popular and sells out quickly. Shio (Salt) and Shoyu (Soy Sauce) are just as well-made as miso. Shio is characterized by a strong dashi flavor akin to fond de veau, while Shoyu features pan-seared kamaboko, a classic Jun-sumi element.
