Overview
Sawada-Shoten Umeda is a specialty tantanmen restaurant in Nishi-Umeda/Dojima, created by Chef Sawada of the Michelin-starred Italian restaurant "Es Sawada." Its signature "Shibitang Tantanmen" (980 yen) features a unique soup based on bonito flakes (sababushi) fish broth, with the appealing option to customize spiciness (karasa) and numbness (shibire) verbally in 4 levels each. Starting with the aroma of sababushi's Japanese broth, a rich sesame flavor follows, gradually giving way to the numbing sensation of sansho pepper and the spiciness of chili, making it truly an original "saba-dashi tantanmen." The medium-thick, flat, wavy noodles perfectly entwine with the soup, and toppings include tender, juicy seared pork belly chashu, moist and plump chicken ham, and bok choy. Opting for the "Vegetable Tantanmen" (1,230 yen) adds plenty of vegetables such as cabbage, carrots, bean sprouts, onions, chives, and wood ear mushrooms. The side "Mapo Don" (300 yen) is a dish of Chef Sawada's authentic Sichuan mapo tofu over rice, and a variety of sets including Mapo Rice, Chicken Rice, and Chashu Don are also available. Enjoy changing the flavor with sansho chili oil, extra sansho pepper, ichimi chili, green sansho, and kombu vinegar available on the table. A regular's tip is to add any leftover Mapo Don into the tantanmen soup at the end for a spicy and numbing "Mala Rice" finisher. The restaurant has a total of 12 seats: 7 at the counter, one 4-person table, and one 2-person table. Paper aprons are provided, which is a thoughtful touch. While closed on Saturdays and Sundays, it operates continuously on weekdays and national holidays until 11 PM.

1Before Entering
Located on a street in Dojima, a short walk from Nishi-Umeda Station C69 exit (via Do-chika underground mall). Business hours are Monday-Friday and national holidays from 11:00 AM to 3:00 PM (L.O. 2:30 PM) and 5:30 PM to 11:00 PM (L.O. 10:30 PM). Closed on Saturdays and Sundays (may have irregular closures). Total of 12 seats: 7 at the counter + one 4-person table + one 2-person table. Expect queues during lunch peak hours.
2Purchasing Tickets & Ordering
The system requires purchasing meal tickets from a vending machine outside the shop before lining up. There are no food photos or English descriptions. Signature items include Shibitang Tantanmen (980 yen), Vegetable Tantanmen (1,230 yen), with flavored egg (ajidama), and chashu with flavored egg. Mapo Don set (additional 300 yen), Chicken Rice set, Chashu Don set, and mini fried rice are also available. While queuing, a staff member will come out to confirm your preferred spiciness (karasa) (levels 1 to 4) and numbness (shibire) (levels 1 to 4), so please respond verbally. For first-time visitors, level 3 for both spiciness and numbness is generally recommended; level 4 offers an addictively intense spiciness and numbness. Cash, credit cards, e-money, and QR code payments are all accepted.
3Seating & Receiving
Queue in front of the ticket machine and take your assigned seat. Paper aprons are provided, which are convenient when you sweat from the spiciness. Hand over your meal ticket at the designated spot and state your preferences. Your order will arrive in 5 to 10 minutes. The soup may appear to have two different colors, which is a presentation to separate the spicy and numbing elements.
4Other
First, taste the soup to enjoy the difference in spiciness and numbness before mixing it halfway through. You can change the flavor with sansho chili oil, extra sansho pepper (oi sansho), ichimi chili, green sansho, and kombu vinegar available on the table. Adding kombu vinegar makes the taste lighter and easier to eat in the latter half. The Mapo Don and Mapo Rice sets feature Chef Sawada's authentic mapo tofu; a popular way to finish is to add it to the tantanmen soup at the end for a "Mala Rice" finisher.
