Seabura Ramen Chachatei
背脂ラーメン チャッチャ亭
Overview
Seabura Ramen Chatchatei is a specialty shop for seabura (pork back fat) ramen, located at Dogenzaka 2-25-5, a 4-minute walk from Shibuya Station and a 6-minute walk from Shinsen Station. Renamed and specialized from "Tokyo Seabura Ramen Men-Oh Shibuya Honten" on January 22, 2022, it is supported by customers in Shibuya seeking the authentic taste of seabura ramen. Its main feature is an authentic system allowing customers to choose their desired amount of seabura from three levels: "Ko-Chatcha" (sweetness and richness), "Nami-Chatcha" (rich), and "Dai-Chatcha" (super rich), accommodating various preferences and hunger levels. The seabura is prepared to highlight an elegant sweetness and umami rather than greasiness, carefully designed not to overpower the flavor of the rich tonkotsu-shoyu (pork bone and soy sauce) base soup. The soup is also described as a seabura-shoyu version with an "Ore-ryu Shio Ramen" taste, offering a light yet robust animal-based dashi (broth) flavor that appeals to a wide range of palates. The noodles are medium-thick, loosely wavy, curly noodles (chijire-men) that effectively carry the soup and seabura, while thick, succulent chashu (braised pork belly) enhances the overall satisfying texture. In addition to the signature seabura ramen, the popular limited Mabo Seabura-men (1480 yen) is a unique dish combining authentic mapo tofu (spiced with chili oil (ra-yu) and sansho (Sichuan pepper)) with seabura-shoyu soup, featuring curly noodles hidden beneath the mapo tofu. After enjoying flavor changes with the table-top condiments such as grated garlic, pepper, and kaeshi (a concentrated seasoning sauce), a classic recommendation is to soak rice in the remaining soup for a zosui (rice porridge) style finish. During lunch hours (11:00-15:00), a complimentary large portion of noodles is offered, a welcome service for those seeking a more substantial meal.
How to Order
1Before Entering
Located at Shimada Building 1F, 2-25-5 Dogenzaka, 4 minutes walk from Shibuya Station, 6 minutes walk from Shinsen Station. Open daily from 11:00 to 22:30 (irregular holidays). There are times when you can enter without waiting, such as late nights around 9 PM on Thursdays or 10 PM on Fridays, right after opening around 11 AM on Saturdays, or after 2 PM on weekdays. Around 11 PM, it's often a single-staff operation with plenty of availability.
2Purchasing Meal Tickets
There's a ticket vending machine at the shop entrance; purchase your meal ticket before heading to your seat. The vending machine does not have English display but is easy to use with pictures (difficulty level 2). Signature dishes include Seabura Ramen (back fat ramen), Mabo Seabura Men (limited) 1480 yen, Abura Soba (oil noodles), Seabura TKM (back fat egg-over-rice), and Oi-Meshi (extra rice). The biggest feature is the three-level selection of back fat quantity (小チャッチャ (sukuname: less back fat)/並チャッチャ (futsu: regular back fat)/大チャッチャ (ome: more back fat)), with a unique process of specifying the back fat amount on the ticket machine. During lunchtime from 11:00 to 15:00, a large portion of noodles (oomori: large size) is free. Payment is cash only; credit cards, e-money, and QR code payments are not accepted.
3Seating and Receiving Your Order
It's a compact shop with 19 seats in total, mainly counter seats, plus two 4-person tables at the back, suitable for groups. Staff will guide you to an empty seat, and your order will be served in about 5 minutes. After finishing, please return your bowl to the top of the counter yourself.
4Other Information
This is a specialized back fat ramen shop that rebranded and specialized from "Tokyo Seabura Ramen Men-Oh Shibuya Honten" on January 22, 2022. The signature Seabura Ramen consists of thick noodles (medium-thick loose wavy type) and a rich tonkotsu shoyu (pork bone soy sauce) soup, topped with plenty of back fat in your chosen quantity. The back fat is prepared to bring out an elegant sweetness and umami rather than greasiness, designed not to overpower the base soup's flavor. The chashu (braised pork) is cut thick and plump, offering a satisfying meaty texture. Grated garlic, pepper, and kaeshi (flavor-adjusting sauce) are available on the table for flavor customization. A popular way to finish is to soak rice in the soup, like a zosui (rice porridge). Seabura TKM (egg-over-rice with back fat) and the limited Mabo Men (mapo tofu noodles) are also popular for their unique compositions.
