Seimenya
清麺屋
Overview
Near Nihonbashi Otaroad, this lunch-only specialty shop stands out on a street lined with maid cafes, boasting a tranquil ambiance reminiscent of a traditional Japanese restaurant. It uses noodles from Kyoto's renowned noodle factory 'Menya Teigaku,' with the owner's deep commitment to noodles clearly reflected in the shop's very name. The signature Tori Shoyu Tsukemen (chicken soy sauce dipping noodles) features a chintan-kei (clear broth style) dipping soup, the star of the dish, meticulously simmered for hours using chicken bones (torigara), seafood, and chicken offal (torimotsu). Despite its clear appearance, it offers a profound flavor with layers of umami from the bones and seafood, boldly introducing the 'chintan-kei tsukemen' genre at a time when rich, cloudy broths (hakudaku-kei, cloudy broth style) dominate. The medium-thick to thin noodles provide both excellent slurpability and a satisfying bite, reflecting the owner's intention to meticulously design them for perfect unity with the dipping soup. After finishing your tsukemen, you can order the 'Okami no Ojiyya' (Mistress's Rice Porridge, +250 yen), a unique service to this establishment where rice is added to your leftover dipping soup and finished right before your eyes. This closing dish, an extension of Japan's zosui (rice porridge) culture, ensures not a single drop of the dipping soup's umami is wasted, making it a highly recommended 'hidden gem' by repeat customers. Seasonal limited-time menus are another highlight, featuring a diverse range of flavors such as cold dishes in summer and seabura niboshi (pork back fat and dried sardine broth) in winter. The fact that many fans visit every season, seeking different tastes crafted by the same owner, speaks to the shop's deep research into noodles and broth. Tori Soba (chicken ramen) in both shoyu (soy sauce) and shio (salt) flavors is also a signature offering, allowing you to savor the excellence of the shop's broth beyond tsukemen.

4Other information
Their signature dipping broth is a clear soup base, made by simmering chicken bones, seafood, and chicken giblets for a long time. The noodles are medium-thick to thin, made by "Menya Teigaku", and the owner has a strong commitment to their noodles. You can change the flavor with ichimi togarashi (red chili powder) and black pepper available at the table. For Tsukemen, it is recommended to add "Okami no Ojiya" using the leftover dipping broth and rice after you finish your noodles. Seasonal limited-time menus, such as chilled noodles (summer) and Niboshi with back fat (winter), are also worth checking out.
