A hidden gem of shinamen (Chinese-style noodles) tucked away in an underground arcade in Ginza 6-chome, just a 2-minute walk from Ginza Station. Established in 1995, this is the main branch of the 'Hashigo' group, which operates three restaurants in the Ginza area. Continuous lines form daily for their signature 'Dandan-men'. Their Dandan-men is distinct from typical Sichuan Tan Tan Mien; it's a unique bowl featuring a crisp shoyu-based soup with the richness and spiciness of sesame paste (zhīmajiàng), complemented by a hint of refreshing yuzu aroma. The soup is light and easy to drink, and the spiciness is not overly intense, making it enjoyable even for those who aren't keen on very spicy food. The noodles are extra-thin and straight, reminiscent of Hong Kong-style noodles, characterized by their firm, 'patsun' bite. The most famous dish is the 'Paikou Dandan-men' (Sparerib Dandan-men, 1,200 yen). It comes with a generous piece of fried pork sparerib coated in a curry-flavored batter. When dipped in the soup and eaten after the batter absorbs the savory broth, it achieves an exceptional flavor. There are several variations, including 'Chiisui Dandan-men' with chicken, 'Darou Dandan-men' with pork belly, and 'Zaasai Dandan-men' with preserved mustard greens. You can also choose your spice level from regular to extra hot. Another famous feature is the complimentary rice and the thinly sliced 'Ryoma Takuan' (pickled daikon radish) available at the table. Regulars often enjoy placing the takuan on rice and drizzling it with soup. Side dishes like shumai (available from 1 piece), gyoza, bang bang chicken, and bottled beer are also available, making it suitable for a late-night meal to finish off a drinking session.
How to Order
1Before Entry
Located in Ginza 6-chome, a 2-minute walk from Ginza Station A2 exit. Also within a 5-minute walk from Hibiya Station and Yurakucho Station. Operating hours are long: Mon-Fri from 11:00 AM to 5:00 AM the next day (late night operations), and Sat-Sun-Holidays from 11:00 AM to 9:00 PM. During lunch peak (around 12 PM) and on weekends, there may be a wait of a few to a dozen people, but service is quick (2-5 minutes) and turnover is good, so wait times are generally 10-30 minutes. It's relatively easy to get in late at night.
2Ordering
Upon entering, staff will guide you to an empty seat. There is no ticket machine; it's a post-pay system where you order orally after being seated. For first-time visitors, the signature 'Paikou Dandanmen' (Sparerib Dandanmen, ¥1,200) or the simple 'Dandanmen' (¥1,000) are easy to understand choices. There are many options such as 'Chiisui Dandanmen' (chicken), 'Daaro Dandanmen' (pork belly), and 'Zaasai Dandanmen' (zha cai). Spice levels can be chosen from 'Normal' or 'Extra Spicy'. Customizations like 'Yuzu-oome' (more yuzu) and 'Negi-oome' (more green onion) can also be requested when ordering. Payment is cash only at the counter when leaving. Credit cards, e-money, and QR code payments are not accepted.
3Seating / Receiving
There are only 24 counter seats. The layout is long and narrow with depth, and staff will guide you from the back inwards. Service is very quick, around 2-5 minutes. You will be asked if you want the free 'Gohan' (rice); for first-timers, it's highly recommended to add it.
4Other
Finely sliced 'Ryoma Takuan' (pickled daikon) is always available on the table. A popular way for regulars to enjoy it is by placing it on rice and pouring dandanmen soup over it. You can also change the flavor with pepper or vinegar, but it's recommended to enjoy the original aroma first. Side dishes like shumai (can be ordered from 1 piece), gyoza, bang bang ji, and bottled beer are also available, making it popular to enjoy drinks and snacks before finishing with ramen. Free rice refills are also available.
