Shinasoba Tanaka
志奈そば 田なか
Overview
"Shinasoba Tanaka" is a highly-regarded ramen shop specializing in niboshi ramen (dried sardine ramen), located in a residential area. It's a 4-minute walk from Mukohara Station (Toden Arakawa Line), 8 minutes from JR Otsuka Station, and 10 minutes from Higashi-Ikebukuro Station (Tokyo Metro Yurakucho Line). Although a bit far from Ikebukuro Station, it's a popular spot where fans seeking rich niboshi-based soup gather. The signature Jūnō Niboshi Soba (Heavy Rich Dried Sardine Soba) features a deep and rich soup, simmered for 9 hours over high heat using copious amounts of dried sardines (niboshi), true kombu, aromatic vegetables, and chicken and pork collagen. Despite its thick and heavy viscosity, the aftertaste is mellow and free of any unwanted flavors, enhanced by a generous addition of niboshiko (dried sardine powder). It offers a unique approach distinct from "cement-style" (semento-kei) rich niboshi, resulting in a flavor profile that attracts many repeat customers. The noodles are low-hydration (teikasui), firm, and thin ("patsun-patsun"), often praised as being "just right." This combination is meticulously designed to perfectly entwine with the soup. Toppings include three types of chashu (sliced pork/chicken): pork shoulder loin, seared pork belly, and rare chicken breast, along with chopped onion, kuro bara-nori (black shredded seaweed), and green onions, all subtly seasoned to enhance the soup's flavor. The Niboshi Truffle Soba (950 yen) presents a unique arrangement with truffle paste placed directly on the noodles, accompanied by chicken breast and pork shoulder chashu. This dish offers a delightful contrast between the aromas of niboshi and high-quality truffle. For regulars, enjoying the Niboshi Aedama (300 yen) (extra seasoned noodles) after finishing the main noodles is a popular way to continue the meal. These low-hydration thin noodles can be savored by dipping them into the remaining soup or enjoyed as is with their savory seasoning. Paper aprons are also available, allowing you to enjoy the thick, viscous soup worry-free without splashing your clothes.
How to Order
1Before entering
Located in a residential area, a 4-minute walk (248m) from Toden Arakawa Line "Mukōhara Station", an 8-minute walk from JR Ōtsuka Station, and a 10-minute walk from Tokyo Metro Yurakucho Line "Higashi-Ikebukuro Station". Open Mon-Fri, holidays 11:00-15:00 / 17:30-21:00, Sat 11:00-15:00. Closed Sundays. Weekday lunch and after 17:00 are relatively easier to enter, but holiday lunch times can be crowded. Access from Ikebukuro Station is a bit far, so Mukōhara Station or Ōtsuka Station are more realistic options.
2Purchase meal ticket and order
There is a touch panel ticket vending machine at the entrance of the store. When it's not busy, buy a ticket and proceed directly to a seat; when crowded, customers are seated sequentially after waiting inside. Although it's a touch panel, there are no photos or English descriptions, so it's helpful to be familiar with the menu names (Jūnnō Niboshi Soba / Niboshi Truffle Soba / Jūnnō Niboshi Chāshū Soba / Tokusei / Aedama). Signature dishes are Jūnnō Niboshi Soba for 950 yen, Niboshi Truffle Soba for 950 yen, Jūnnō Niboshi Chāshū Soba for 1350 yen, Tokusei, and Aedama for 300 yen. Payment is cash only; cards, e-money, and QR payments are not accepted.
3Seating and receiving
There are only 9 counter seats, and staff will guide you to a seat. Serving takes approximately 5 minutes. Paper aprons are also available.
4Other information
The signature Jūnnō Niboshi Soba features a rich and thick soup, simmered for 9 hours over high heat with a large amount of dried sardines (niboshi), true kombu, aromatic vegetables, and chicken/pork collagen. While thick and heavy, the aftertaste is mellow, and it pairs well with the low-hydration, firm thin noodles. The Niboshi Truffle Soba has a unique composition with truffle paste on top, paired with chicken breast and pork shoulder chāshū. After finishing the noodles, it's a regular's style to continue enjoying noodles with Niboshi Aedama (300 yen).
