A renowned, reservation-only clam broth ramen specialty shop (kai-dashi ramen senmonten) located in Nishirokugo, Ota-ku, a residential area a 5-minute walk from Keikyu Zoshiki Station and 15-minute walk from JR Kamata Station. Opened in 2018, it has been selected for Tabelog's "Ramen TOKYO Hyakumeiten" for six consecutive years from 2020 to 2025, and also earned a Michelin Bib Gourmand Tokyo in 2026. The signature "Shinjiko Shijimi Chuka Soba" (Shinjiko Clam Chinese Soba) features a chemical-free (mukacho) salt-based soup made with approximately 80 Yamato shijimi clams (Yamato shijimi) from Lake Shinji, Shimane Prefecture, per bowl. The golden, clear soup, concentrated with succinic acid derived from the clams, is enhanced by the richness of local chicken (jidori) and a sharp salt tare (shio tare), delivering an exquisite clam aroma and umami that permeates the senses from the very first sip. For the noodles, when selecting the soy sauce (shoyu) option, you can choose from two types: a low-hydration straight thin noodle (teikasui straight hosomen) from Kanno Seimenjo, known for its crisp, satisfying bite, or a medium-thin noodle made with Mochi Hime flour, hand-kneaded (temomi) by the owner himself. For salt-based ramen, the standard thin noodles are typically used, while the hand-kneaded (temomi) noodles are also a popular pairing for soy sauce ramen. Standard toppings include slow-cooked pork shoulder loin, hanging-roasted pork belly, chewy shrimp wontons with a hint of ginger, a rich soft-boiled marinated egg (ajitama), menma (bamboo shoots), green onion sprouts, and red onion. The side dish, "Tsurushiyaki Bara Don" (Hanging-Roasted Pork Belly Bowl) for 500 yen, is a perfectly crafted bowl featuring charcoal-smoked pork belly served over rice with a sweet and savory sauce, topped with an egg yolk in the center. Special limited-time menus, such as "Kuwana Hamaguri Chuka Soba" (Kuwana Clam Chinese Soba), "Akadashi Chuka Soba" (Red Miso Soup Chinese Soba), and "Jidori to Shijimi no Chuka Soba (Shoyu)" (Local Chicken and Clam Chinese Soba with Soy Sauce), appear seasonally or for special events, ensuring repeat customers always find something new to enjoy. 1Before entering
Located in a residential area of Nishirokugo, Ota Ward, a 5-minute walk (384m) from Keikyu Zoshiki Station and a 15-minute walk from JR Kamata Station. Reservations are absolutely required before visiting as it is a complete reservation system. To make a reservation, proceed to the reservation site from the TableCheck link in the official Instagram profile (@ramenkohaku) and secure your desired date and time; a reservation fee of 390 yen per person will be charged (online payment via credit card, etc.). Opening hours are only during lunch, Mon-Fri 11:00-15:30, Sat 11:00-16:00, and closed on Sundays and national holidays. The latest business days and limited menu information can also be found via the official Instagram profile link. It is safer to arrive at least 10 minutes before your reservation time, avoiding last-minute arrivals.
2Purchasing meal tickets and ordering
Upon arrival, first purchase meal tickets at the ticket vending machine inside the store (staff will prompt you even if you are waiting outside). The ticket vending machine has no photos, no English, and is only in Japanese. Payment is cash only; credit cards, e-money, and QR code payments are not accepted (reservation fees are paid online). Choose from the signature Chukasoba (Salt/Soy Sauce), Special, Ajitama (flavored egg), Tsurushi-yaki Baradon (grilled pork belly bowl), etc. If you choose soy sauce, staff will ask you whether you prefer "hosomen" (thin noodles) or "temomi" (hand-crumpled noodles) when ordering, so please state your preference. Salt is usually served with hosomen (thin noodles).
3Seating and receiving
After purchasing meal tickets, wait outside and enter the store when called by staff at your reservation time. There are only 5 counter seats, arranged in an L-shape. Staff will assign your seat. After handing over your meal ticket, it takes about 10 minutes for your order to be served.
4Other
Only pepper is available on the table; flavor-changing items are minimal. The soup's high quality and the delicate flavor of shellfish dashi are the main stars, so it is recommended to enjoy it as is first. In addition to the signature menu, combining it with the "Tsurushi-yaki Baradon" side dish is a popular order. The noodle portion is slightly small, so if you want more volume, ordering "oomori" (large portion) or adding the Baradon is advisable.
