Overview
Shinpuku Saikan Hamamatsucho is a franchise of Shinpuku Saikan Honten, a long-established restaurant in Higashishio-koji, Kyoto Station, which started as a food stall in 1938. It is the latest branch in Tokyo, following Azabu-juban and Akihabara. Its signature dishes are the surprisingly black Chuka Soba and equally jet-black Yakimeshi (fried rice). The rich soy sauce-based soup, primarily made from chicken bones with added pork umami, uses aged dark soy sauce from Kyoto's Gokou Shoyu, which has been used since the restaurant's founding. Contrary to its jet-black appearance, it offers a mellow yet sharp soy sauce flavor. The noodles are medium-thick straight noodles from Kondo Seimen, which pick up the soup well. The simple composition of thinly sliced chashu pork covering the surface, a generous pile of green onions, and bean sprouts is also a tradition from the main branch. The jet-black Yakimeshi is a side dish devised by Katsunori Yamauchi, the second-generation owner of the main branch, in the late 1960s. This specialty, with its umami drawn from the ramen's soy sauce tare and beef fat, is addictive; despite its simple ingredients of thinly sliced chashu, egg, and green onions, you won't be able to stop eating it. Sets allowing free combination of small (sho) and regular (nami) sizes are popular. Many regulars enjoy customizing their meal with the original chili oil (rayu) on the table or adding a raw egg (nama-tamago). Located in an area that operates until 11 PM, it is bustling with locals and tourists from lunch to after work.

1Before Entering
Located in an office district, a 2-minute walk from JR Hamamatsucho Station or Toei Daimon Station. It tends to be crowded during lunch (12-1 PM) and in the evening after work. With 48 table seats and a relatively fast turnover, even if there's a line outside, you can usually get in within 5-15 minutes. On Sundays and public holidays, evening hours are shorter, closing at 9 PM.
2Ordering and Payment
There is no ticket machine; it's a post-payment system where staff take your order while you're waiting in line or after you're seated. Most customers choose a set combining the signature Chuka Soba (Nami/regular 980 yen) and Yakimeshi (fried rice) in their preferred sizes of "Small" (sho) and "Regular" (nami). The "Sho-Sho Set" (Small-Small) for 1,200 yen and "Nami-Nami Set" (Regular-Regular) for 1,400 yen are popular, and many also combine a small and a regular. If you wish to specify noodle firmness (men no katasa), please tell the staff when ordering. They also offer alcoholic beverages like beer and Shaoxing wine, and snacks such as stir-fried pork kimchi.
3Seating and Receiving Your Order
There are no counter seats; table seats are shared. Acrylic partitions make it comfortable even for solo diners. Service time is about 5 minutes during peak hours, and a few minutes when it's less crowded. If you're sharing, small plates and bowls will be provided without asking.
4Other Information
On the table, there's original chili oil (rayu); adding a small amount to your Chuka Soba gives it a spicy kick and changes the flavor. For Yakimeshi, break in a separately ordered raw egg (nama-tamago, 50 yen) and mix in the yolk for an instant boost of richness. Many regulars also enjoy finishing their meal by adding any leftover Yakimeshi into the soup. Payment can be made with cash, PayPay, or transportation IC cards like Suica.
