1Before entering

A roadside shop about 1 minute walk from Keihan Nakanoshima Station Exit 2, or about 8 minutes walk from JR Tozai Line Shin-Fukushima Station. The shop name "塩々" is read as "Shoppe-Shoppe". Business hours are in two parts (Tue-Sun 11:00-15:00 / 18:00-21:00). Closed on Mondays + certain Tuesdays (e.g., Feb 24), and closes early when ingredients run out. As the owner operates alone (one-op), table turnover is slow during peak hours. Even with a 3-4 group wait on Sunday lunchtime, you can usually get in relatively quickly, but considering the risk of noodles running out, it's safer to go right after opening (11:00) or at the start of the evening session (18:00).

2Purchasing meal tickets and ordering

Purchase meal tickets at the vending machine near the entrance. There are photos displayed, but no English descriptions. The signature dish is "Aizu Yamajio Ramen" (890 yen - regular / 1,050 yen - omori (large size)), a Kitakata ramen specialty shop using rare Aizu yamajio (mountain salt) made by boiling down hot spring water from Kita-Shiobara Village, Fukushima Prefecture. Derivative menus include "Ajitama Yamajio Ramen" (990 yen), "Karamiso Yamajio Ramen" (type where you dissolve miso yourself), "Aka Yuzu Yamajio Ramen" (seasonal), "Yamajio Chashu-men", and sides like "Hajippe Kakuni-don" (380 yen) and half karaage. Payment is cash only; credit cards, e-money, and QR payments are not accepted.

3Seating and receiving

Total of 11 seats: 6 counter seats + 1 four-person table. Staff will guide you to your seat (the owner does this due to one-op) and you hand over your meal ticket. Serving time is approximately 8-10 minutes. The ramen consists of clear golden soup, medium-thick curly noodles, melt-in-your-mouth pork belly chashu, menma, and chopped green onions. Cold water is self-service.

4Other

Table condiments include vinegar, pepper, chili oil, and shichimi-togarashi (seven-spice chili pepper) for flavor change. A curious change occurs when you add vinegar, making the salt soup taste sweet, a flavor-changing method that has spread by word-of-mouth as "surprisingly sweet when I added vinegar, and it's delicious!" For Karamiso Yamajio, it's customary to first enjoy the base salt soup without dissolving the miso, then dissolve the miso in the latter half to change the flavor. Although the name "Shoppe-Shoppe" (塩々) might suggest saltiness, Aizu Yamajio actually has a gentle flavor with a subtle sweetness behind the saltiness, and many customers drink all the soup.
