Sugoi Niboshi Ramen Nagi Shinjuku Golden Gai
すごい煮干ラーメン凪 新宿ゴールデン街店本館
Overview
“Sugoi Niboshi Ramen Nagi Shinjuku Golden-gai Honkan” is located on the 2nd floor of G2 Street, Shinjuku Golden-gai, 1-1-10 Kabukicho, a 6-minute walk from JR Shinjuku Station East Exit and a 3-minute walk from Shinjuku-sanchome Station. As the main branch (“Honkan”) of “Nagi,” nestled at the end of a steep staircase in an alley of Shinjuku Golden-gai, this shop proudly serves its rich niboshi (dried sardine) soup 24 hours a day. Each bowl features a blend of over 60g and 20 varieties of carefully selected dried sardines. The soup's greatest characteristic is its intense niboshi aroma that immediately captivates, yet it boasts minimal bitterness and a clean, refreshing aftertaste. This perfect balance of a powerful umami punch from the first bite and a crisp, lingering finish is why it's so widely loved. Instead of the typical thin noodles often found in niboshi-based ramen, Nagi uses flat, thick, wavy noodles, offering a delightful texture for those who prefer thicker noodles. For an even more unique experience, add the “Ittan Momen” topping—a flat, ribbon-like, extra-thick noodle resembling a flattened wonton skin—which provides a distinctive textural accent similar to himokawa udon, a Nagi-specific delight. The ramen offers multiple ways to enjoy its flavors: stir the spicy miso (karamiso) placed on the char siu into the soup for an evolving taste, or add a splash of niboshi-su (dried sardine vinegar) from the table around the bowl for another captivating variation. Complementary elements like the white ajitama (seasoned egg) and generously diced thick green onions further enhance the experience. The Abura Soba (soupless ramen), priced at 1500 yen, is a unique creation, featuring a rich niboshi (dried sardine) sauce instead of a sweet one. It's designed to be enjoyed by thoroughly mixing the firm, medium-thick noodles, thick-cut tender char siu, and soft-boiled egg with the savory niboshi flavor. For a satisfying conclusion to your meal, the Ryoshi-meshi (Fisherman's Rice)—a dish of minced fish paste on white rice topped with nori seaweed and katsuobushi (bonito flakes)—is popularly enjoyed by dipping it into the leftover soup, making it a highly satisfying shime (closing dish). Its interior, reminiscent of “The Japan,” is a distinctive feature that delights international visitors. Being open 24 hours, it's also a popular choice for late-night or early-morning ramen, establishing itself as one of Shinjuku's most iconic establishments.
How to Order
1Before entering
Located at Kabukicho 1-1-10 Golden Gai G2-dori 2F, 6 minutes walk from JR Shinjuku Station East Exit, 3 minutes walk from Shinjuku-sanchome Station E2 Exit on Tokyo Metro Marunouchi Line, Fukutoshin Line, and Toei Shinjuku Line. Open 24 hours from Monday to Sunday (hours may be shortened on some days, announced on X). From Shinjuku Ward Office intersection, walk 3 minutes, enter the cobblestone pavement next to Mister Donut towards Golden Gai, turn right at the second corner, look for the white lantern. The stairs are steep and narrow with no handrail, so be careful when going up and down. On Fridays at 6:30 PM, there are 3 people waiting outside; on weekdays at 8 AM, half the seats are filled; on Sundays at 11 AM, there is no wait. Even with 24-hour operation, congestion varies greatly depending on the time of day.
2Purchasing meal tickets
The ticket vending machine is located immediately after ascending the stairs. If there is a line outside, staff will come down to take orders while you wait, and when it's your turn, you purchase a meal ticket at the vending machine upon entering and then take a counter seat (post-purchase style). When not crowded, you purchase a meal ticket after entering as usual. The vending machine has no photos and no English, but given the many foreign visitors in the Golden Gai area and cashless payment options, its difficulty level is 2. Menu highlights include Sugoi Niboshi Ramen (regular/large size free (oomori muryo)), Tokusei (special), Ajitama (seasoned egg), Abura Soba (oil noodles) 1500 yen, Ryoshimeshi (fisherman's rice, a dish with minced fish on white rice topped with seaweed and bonito flakes), Garlic topping, Ittan Men (extra-thick noodles) additional, Spiciness level 10. Payment options are extensive, including cash, transportation IC cards (Suica, etc.), Rakuten Edy, nanaco, WAON, iD, QUICPay, PayPay, d払い, Rakuten Pay, au PAY, Alipay, and WeChat Pay (credit cards are not accepted).
3Seating and receiving
There are only 10 counter seats. If there are empty seats, you will be guided in order, and you hand your meal ticket to the staff when you sit down. Expect service within 6-10 minutes. The staff are mainly international, supporting the 24-hour operation system.
4Other
This is the home base of "Nagi", located at the end of an alley in Shinjuku Golden Gai, up a steep staircase. Their signature dish is a rich niboshi (dried sardine) soup blended with over 60g of more than 20 types of niboshi per bowl. The strong aroma of niboshi rises, but there is little unpleasant flavor, and the aftertaste is clean. The noodles are not the standard thin noodles for niboshi ramen but rather flat, thick, wavy noodles. The unique "Ittan Momen" topping (extra-thick, flat, fluttery noodles resembling wonton skins) adds a textural accent. There are multiple ways to enjoy the ramen, such as dissolving the spicy miso on top of the char siu into the soup for a flavor change, drizzling niboshi vinegar two times around the bowl from the tabletop for another flavor change, and enjoying the texture of the chopped large green onions. The interior has a "The Japan" feel, designed to delight foreign customers. Ryoshimeshi (fisherman's rice) is also popular eaten by dipping it into the soup.

Miso Mendokoro Tasakaya, a miso ramen specialist located in Nishi-Ikebukuro, is just about a 5-minute walk from Ikebukuro Station's West Exit. This shop is known for its hearty miso ramen: a thick, rich, slightly sweet miso broth, firm thick noodles, melt-in-your-mouth chashu, and a towering pile of crisp bean sprouts (moyashi) – a truly robust and voluminous bowl. The menu features four main series: Miso Ramen, Kara-Miso Ramen (spicy miso), Aemen (a brothless mixed noodle dish), and IWGP Geki-Kara Ramen (extra hot).
