Overview
Sumibiyaki-Noukou-Chukasoba Okurindo is known in the Shiba-Daimon area as a leading example of unique ramen, with its distinctive style of grilling seafood over charcoal and dissolving it into the soup. Its diverse menu features blue fish such as mackerel, saury, horse mackerel, sardine, salmon, and squid, as well as chestnut and mushroom options. The signature dish is the recommended "Mackerel". Fish grilled over charcoal is made into a paste and dissolved into a rich, flying fish dashi-based soup. From the thick, viscous soup, the fragrant aroma of grilled fish and a deep umami flavor burst forth with the first bite. The most distinctive feature is the style of serving toppings on a separate plate. Chashu pork, minced onion, charcoal-grilled green onion, and nori seaweed are served on separate small plates, allowing you to enjoy changes in flavor by adding them at your own timing while maintaining the temperature of the soup and noodles. The noodles are thin and straight, typical of chukasoba, and entangle well with the rich soup. The specialty topping, Truffle Flavored Soft-Boiled Egg (200 yen), is exceptional; when added in the latter half, the rich mackerel flavor combined with the fragrant truffle aroma transforms it into a different dish. A sprinkle of sansho pepper from the gourd-shaped dispenser adds a refreshing accent. The option to enjoy it twice with "Aedama" (extra seasoned noodles, 300 yen) or as a "Teishoku" (set meal with white rice and tsukudani) is also popular.

1Before Entering
2-minute walk from Toei Daimon Station A3 exit, 5-minute walk from Shiba Koen Station A5 exit. Open daily from 11:00-22:00 (may close early if ingredients run out). Lunch peak from 12-1 PM and around 7 PM in the evening tend to be crowded, with 10-20 minute waits outside, but turnover is relatively fast. It is relatively less crowded around 3 PM during the mid-afternoon break.
2Purchasing Meal Tickets & Ordering
Purchase meal tickets at the vending machine by the entrance. Buttons have no photos or English descriptions. Payment is cash only; credit cards, e-money, and QR payment are not accepted. The signature dish is Mackerel (1,200 yen); for first-time visitors, Mackerel or Saury in the top-left of the vending machine are easy to find. If you are interested in a specific type of fish, choose from the vertical menu. Truffle Flavored Soft-Boiled Egg topping (200 yen), Aedama (300 yen), and Teishoku (rice and tsukudani set) can also be purchased together.
3Seating & Receiving Your Order
There are only 15 counter seats. After handing your meal ticket to the staff, your ramen will be served in about 5-10 minutes. The bowl with soup and noodles, along with toppings served on a separate plate (chashu, minced onion, charcoal-grilled green onion, nori, etc.), will be provided together.
4Other Notes
The recommended way to eat is to first enjoy the soup and noodles as they are, then gradually add the toppings from the separate plate in the latter half. Do not add the Truffle Flavored Soft-Boiled Egg from the start; when broken in during the latter half, it completely changes the impression of the soup. There is a gourd-shaped sansho pepper dispenser on the table; a sprinkle adds a refreshing accent. If you choose the Teishoku, pour a little soup over the rice at the end to enjoy every last grain. Aedama can be enjoyed as is, or added to the remaining soup.

炭火焼きした鮭をペースト状にして和出汁で割ったまろやかな白湯スープにストレート細麺が絡んでとても美味!
