Taishiosoba Touka Sogo Yokohama
鯛塩そば灯花 そごう横浜店
Overview
Taishio Soba Toka is a popular ramen shop with branches in Shinjuku, Yotsuya, and elsewhere, with its Yokohama store located on the 10th floor restaurant area of Sogo Yokohama. The shop specializes in a light-bodied (tanrei-kei) salt ramen featuring sea bream (tai) broth, and its elegant, modern Japanese interior complements its department store location. The classical music playing in the background gives the shop the atmosphere of a refined Japanese restaurant rather than a typical ramen shop, attracting many families and female customers. The signature Taishio Ramen boasts a striking clear, golden-hued soup made with 100% true sea bream dashi. It is free of the typical fishy odor or bitterness, offering a refined flavor where the sharpness of salt harmonizes with the umami of sea bream, accentuated by the refreshing aroma of yuzu peel. The noodles are smooth, thin, and highly hydrated, pairing perfectly with the light soup. The beautiful presentation, with white and pink flower-shaped fu (wheat gluten) adorning the char siu, is also a highlight. Another specialty is the set meal with Tai Chazuke (sea bream over rice in broth), which reportedly serves about 40,000 portions annually. Slices of sea bream coated in sesame sauce and arare (rice crackers) are placed on rice, then dashi or ramen broth is poured over it to enjoy as a finishing dish. The menu also offers a wide range of options, including light-bodied salt tsukemen, chuka soba with rich fish powder, and rich seafood tsukemen.
How to Order
1Before Entering
Located on the 10th floor restaurant area of Sogo Yokohama. Approximately a 3-minute walk from Yokohama Station's East Exit, it's easily accessible via the department store's connecting pathways. As it operates continuously throughout the day, you can stop by even while shopping, but on holidays during lunchtime, there might be a wait of around 10 people. If there's a wait, please queue at the storefront and enter when guided by staff. The turnover is relatively quick, so even with a 10-person wait, you can often be seated in about 10 minutes.
2Ordering
Once seated, order using the tablet (touch panel) on the table. It's easy to choose with accompanying food photos. The signature Taishio Ramen can be ordered individually, but sets with Tai Chazuke, etc., are only displayed if you open the 'Value Menu' at the bottom of the screen, so check there if you're aiming for a set. Half-size noodles are also available. Payment is widely accepted, including cash, credit cards, public transport IC cards, other e-money, and QR code payments (PayPay).
3Seating & Receiving
Food is served quickly, usually within a few minutes after ordering. Unlike Iekei (house-style) ramen shops, there's no process for conveying preferences (like noodle hardness, broth richness, or oiliness), so your order is served as is. Box seats are also available, allowing families with children to enjoy their meal at leisure.
4Other
Black pepper and other seasonings are available on the table if you wish to adjust the flavor. For the Tai Chazuke set, the standard way to eat it is to first enjoy the ramen, then place the sesame-sauce-coated sea bream and arare on rice, and pour the dashi (served in a teapot) or ramen soup over it to finish the meal. Desserts like almond tofu are also available.
