Tenko

Overview
Tenko, located in Shiba-Daimon, is a famous Sapporo-style tonkotsu shoyu (pork bone soy sauce) ramen restaurant that inherited the lineage of Roppongi's 'Tenho.' Its distinct atmosphere, more akin to a small traditional Japanese eatery than a ramen shop, is created by its tasteful Japanese exterior reminiscent of a soba restaurant, a cozy L-shaped counter interior, warm ambient lighting, and the proprietor and proprietress's friendly service in traditional Japanese aprons. There are two signature ramen types. 'Ichi San Go' is the standard shoyu ramen, offering classic deliciousness with its rich and flavorful soup combined with yellow egg noodles. 'Bari San Go' is a popular menu item featuring the same shoyu soup but with firm, curly egg noodles from Nishiyama Seimen, boiled even harder, creating an addictively crisp texture. The soup is a mellow tonkotsu shoyu with a strong bonito dashi (bonito broth) flavor derived from Roppongi Tenho; though salty, the umami of the bonito provides a solid base. The noodles are thin, curly egg noodles from Sapporo's Nishiyama Seimen, which absorb the soup well. The chashu (braised pork) is thick and tender, and can be added for an extra charge. The miso ramen is also excellent, a hidden gem topped with julienned chashu, shredded green onions, and stir-fried bean sprouts. The menu also includes a variety of others like Ton-chan Ramen, Tan-tonmen (dandan-style pork ramen), and Tsukemen. After 2 PM, the proprietor operates the shop alone, and this becomes a special time when the half-size fried rice (han-chahan) is available. The shop operates only on weekday lunchtimes, closing once sold out. It offers thoughtful services such as complimentary half-size rice, two oshibori (wet towels) – one hot and one cold, and service tickets for future visits.
How to Order

1Before Entering
About a 10-minute walk from JR Hamamatsucho Station, or a 5-minute walk from Daimon Subway Station. Open only on weekdays from 11:00 AM to 4:00 PM; closed on Saturdays, Sundays, and public holidays, with occasional irregular closures. Operating days and real-time status are announced on the official Instagram (@tenko_135). It is recommended to check before visiting as they close once the soup runs out. On weekdays between 11:00 AM and 12:00 PM, there are regularly 5 or more people waiting outside; after 12:00 PM, wait times can be around 30 minutes. After 2:00 PM, the proprietor operates the shop alone, which may extend cooking times, but it is also the period when half-size fried rice becomes available.
2Ordering and Payment
There is no ticket machine. The unique system requires customers to either pre-order using the intercom speaker at the entrance or take a seat at the counter inside and then order according to instructions. When ordering, specify the noodle portion (regular / omori (large size) +100 yen), noodle firmness (futsu (regular) / bari (very firm)), soup richness (futsu (regular) / koime (rich)), and the level of richness/oiliness (kotteri doai). For example, you might say 'Bari San Go omori (large size) koime (rich) kotteri.' The main menu items are Ichi San Go (shoyu, 1,000 yen) and Bari San Go (shoyu, 1,000 yen). Side dishes include adding 4 slices of chashu (+approx. 200 yen), complimentary half-size rice, adding nori (seaweed), and half-size fried rice (500 yen, available after 2:00 PM). Payment is strictly cash only; credit cards, e-money, and QR payments are not accepted.
3Seating and Receiving Your Order
There are only 10 seats at an L-shaped counter. The proprietress will guide you to your seat. A hot oshibori (wet towel) is provided upon seating. Your ramen will be served 5-10 minutes after ordering. During or after your meal, the proprietress will ask if you would like a 'cold oshibori,' a special service where an ice-cold wet towel is provided upon request.
4Other
Additional toppings such as ajitama (seasoned egg), nori (seaweed), and menma (bamboo shoots) can be ordered via the ticket machine (intercom). Upon exiting, you may receive a service ticket for your next visit (e.g., half nori, half egg), which encourages repeat visits. Fried rice is available starting from 2:00 PM, a genuine dish stir-fried by the proprietor one by one in an iron wok. Pairing your ramen with a small fried rice allows you to enjoy a moist rice dish with a good peppery kick.
