Tokyo Underground Ramen Ganja
東京アンダーグラウンドラーメン 頑者
Overview
Tokyo Underground Ramen Ganja is the Ikebukuro branch of the "Ganja" group, a pioneer of rich seafood-pork bone tsukemen (dipping noodles), located on B1F of the "Tobu Hope Center" underground mall, directly connected to JR Ikebukuro Station's West Exit. Founded in Honkawagoe (Kawagoe City, Saitama Prefecture), Ganja is a major group that led the rich seafood-pork bone tsukemen boom, operating multiple branches including those in Tokorozawa Station building, Narimasu Station building, and Kawagoe Station platform. The signature Tokusei Tsukemen (Special Tsukemen, 1400 yen) features a thick, rich seafood-pork bone dipping broth (noko gyokai tonkotsu tsukejiru) simmered for over 10 hours using chicken bones, pork bones, bonito flakes, mackerel flakes, soda bonito, and dried sardines. The broth's calculated viscosity ensures the noodles lift well when dipped, allowing the aroma of seafood to fill your nose. The mild, mirin-like sweetness leaves a lasting impression, creating a classic and complete form of seafood-pork bone tsukemen that transcends fleeting trends. The noodles, developed by their parent company Ohashi Seimenjo, are flat, thick, and straight, offering a smooth, chewy texture, with the sweet flavor of wheat spreading with every bite. Noodle portions are available in S (200g) and M (300g) at the same price, with M being the choice for those who prefer a more substantial meal. Toppings include tender chashu (braised pork), crispy green onions, a soft-boiled ajitama (seasoned egg), and menma (fermented bamboo shoots), a classic combination. The refreshing yuzu adds an accent that lightens the overall richness. Finishing with suupu wari (soup dilution, adding seafood-flavored dashi) is the standard style. The Tantan Aemen (Tantan Mixed Noodles, 950-1200 yen) is a soupless tantanmen type with chili oil, minced meat, and green onions, where the flat medium-thick noodles perfectly entwine with the chili oil sauce. It's an enjoyable dish where you first mix and eat, then experience a gradual flavor change as the chili oil accumulates at the bottom, increasing in richness and spiciness towards the end. Its location in an underground mall provides convenience, just 30 seconds walk from the station. A unique payment structure allows only cash and transportation e-money (credit cards and QR payments are not accepted). This is a reliable spot when you want to quickly enjoy authentic tsukemen in Ikebukuro.
How to Order
1Before entering the shop
A specialty shop for rich seafood tonkotsu tsukemen located in the "Tobu Hope Center" B1F underground mall, directly connected to JR Ikebukuro Station West Exit, in the southern "S-14" section. Open daily from 10:00 to 22:00 (L.O. 21:30) with continuous service (subject to Tobu Hope Center operating hours). As an Ikebukuro branch of the Ganaja Group, which started in Hon-Kawagoe, its excellent location with direct station access is a major draw. The shop can be full at 12:30 PM on Sundays, so late weekday afternoons or early evenings are easier times to enter.
2Purchasing meal tickets and ordering
Purchase meal tickets from the vending machine at the entrance. Signature items include Tokusei Tsukemen (special tsukemen) for 1400 yen, Tsukemen for 1100 yen, Tantan Aemen (soupless tantan noodles) for 950-1200 yen, and Niboshi Ramen (dried sardine ramen). Noodle sizes S (200g) and M (300g) are the same price; after handing your ticket, staff will verbally ask for your preferred size. Atsumori (atsumori, warm noodles) is also available. Please specify atsumori when your order is served. Payment is unique as it accepts cash and transportation IC cards (such as Suica) only (credit cards and QR code payments are not accepted).
3Seating and receiving your order
The shop has a total of 24 seats: 12 counter seats and 3 tables for 4 people, accommodating groups and families. Staff will guide you to your seat. Orders are typically served within 5-10 minutes. Paper aprons are available at the entrance, prepared to prevent splatters from the rich soup.
4Other information
The signature Tokusei Tsukemen features a thick, rich seafood tonkotsu dipping broth made by simmering chicken bones, pork bones, bonito flakes, mackerel flakes, soda-gatsuo (frigate tuna), and dried sardines for over 10 hours. As "Ohashi Seimenjo" (Ohashi Noodle Factory) is its parent company, the noodles are flat, thick, straight, smooth, chewy, and firm. The soup adheres well to the noodles, allowing the aroma of seafood to pass through your nose with each bite. The addition of refreshing yuzu also enhances the flavor profile. Finish with a "soup-wari" (soup dilution) at the end; a ladle will be provided upon request. Tantan Aemen is a soupless tantan noodle dish with chili oil, ground meat, and green onions. Mix the noodles with the chili oil sauce to enjoy this refreshing and addictive spicy dish.
