Torisoba 223
鶏そば223
Overview
A specialty shop focusing on salt ramen, located in a residential area of Kitaoji, Kyoto. It opens from 8 AM, making it known as one of the few places in Kyoto where you can enjoy morning ramen. The master, aiming for the ultimate salt ramen, traveled across Japan, resulting in a bowl that uses no chemical seasonings. The star is chicken broth made from multiple local chicken breeds such as Tanba Kurodori, Kyo Aka Jidori, and Awao-dori. The signature dishes include 'Milano no Asahi' (Sunrise in Milan), a clear umami salt soup; 'Firenze no Yuuhi' (Sunset in Florence), a slightly cloudy rich umami soup; and 'Girolamo no Hatsukoi' (Girolamo's First Love), an umami salt mazesoba – all featuring Italian-inspired menu names. The noodles are medium-fine wavy noodles from Menya Teigaku, known for being used by popular Kyoto shops, and their aroma and texture pair well with the soup. Special olive sauce, made with surf clams, basil, and shallots, is available on the table, instantly transforming the dish into a Western style. For the finishing touch, a risotto-style ending is recommended, where you pour soup over rice topped with seared Parmesan cheese. Sides such as chicken ham and chicken rice bowls are also plentiful.
How to Order

1Before entering the shop
It's about an 8-10 minute walk from Kitaoji Station on the Karasuma Subway Line, or about 2 minutes from the Shokubutsuen-mae bus stop. The exterior blends into the residential area, making it hard to identify as a ramen shop, so look for the "223" sign and the mural as landmarks. It operates from 8 AM to 3 PM and closes once the soup sells out. The morning hours are relatively less crowded, but there can be queues during lunchtime.
2Ordering
There is no ticket machine; customers sit at the counter, view the menu, and order orally. The main ramen options are the three salt ramens: Milano no Asahi, Firenze no Yuuhi, and Girolamo no Hatsukoi. Orally communicate your order for sides like the chicken bowl or chicken ham bowl, and the recommended kuki-wasabi (stem wasabi) topping.
3Seating and Receiving
The interior has only an L-shaped counter with about 7 seats. The shop often operates with a single owner, so serving time is usually a few minutes. If you wait in line outside, you might be offered cold water.
4Other
First, enjoy the soup as is. Midway, add the special olive sauce to change it into a Western style with the umami of shellfish and the aroma of herbs. For the finish, a popular way is to order rice topped with Parmesan cheese and pour soup over it, creating a risotto-style dish. Payment is cash only.
