Overview
A Shinsaibashi/Minamisenba area branch of the Tori Soba Zagin Group. While the main store features a tori paitan (creamy chicken broth) base, this Niboshi (dried sardine) branch adds a rich layer of dried sardine flavor, creating a harmonious balance of creamy richness and seafood aroma. A unique feature is that the soup is whisked before serving, resulting in a fluffy and light texture. The signature Tori Soba (990 yen) is topped with a mountain of fried burdock, providing both visual impact and a delightful textural accent. It can be enjoyed crispy, or by soaking it in the soup, it becomes tender, revealing a different character. Opting for the "Special" version adds two kinds of chashu: chicken breast chashu and rare chashu. A favorite among regulars is to dip the rare chashu into the soup just before eating. The range of limited-time menus is also extensive, allowing you to encounter a different bowl each season, such as Zagin-style Jiro (a hybrid of iekei (Yokohama-style tonkotsu shoyu) and Jiro-style), Ankimo Tsukemen (monkfish liver dipping noodles), and spicy versions. It's a popular shop selected for Tabelog's Top 100 Restaurants 2024, with branches also in Tokyo. Located conveniently close to Shinsaibashi-suji, it forms part of a "ramen shop row" spot, lining up next to Ramen Butayama.
How to Order
1Before entering
Located on the 1st floor of Nippo Building in Minami-Senba, a 5-minute walk north from Exit 1 of Shinsaibashi Station Midosuji Line. No numbered tickets or reservations; when crowded, please queue near the entrance. Business hours are long, from 10:00 to 23:30 (L.O. 23:00). During weekday evenings or weekend mornings/afternoons, you might be seated without a wait, but there could be a 10-15 minute wait in the late-night hours around 22:00. The store also announces, "Even last-minute visits before closing are welcome," making it easy to rush in just before the last order.
2Purchasing meal tickets / Ordering
A ticket vending machine is located outside the store; it has photos but no English text. If there's no line or a short one, the process is to buy a meal ticket at the vending machine before entering. It's unclear whether to use the vending machine before queuing during crowded times or after, so it's safest to judge by the queue situation. In addition to the signature Torisoba (Chicken Soba) (990 yen), there are special toppings, large noodles, rice, and seasonal limited-time menus (Zagin-style Jiro, Ankimo Tsukemen, Spicy Torisoba, etc.). During non-crowded hours, staff might offer recommendations like "Torisoba + Meat Sushi" in front of the vending machine. Payment is cash only; credit cards, electronic money, and QR code payments are not accepted.
3Seating and serving
There are a total of 11 seats: 7 at the counter and 1 table (for 4 people). Staff will guide you to an available seat and you hand over your meal ticket. Service is fast, with your bowl arriving within a few minutes to about 10 minutes after seating.
4Other
Aprons are available at the table if you are concerned about soup splashing. The fried burdock can be enjoyed crispy, or you can dip it in the soup halfway through to enjoy a change in texture. For the rare chashu, a popular regular's way of eating it is to briefly submerge it in the soup at the end to lightly cook it. Upon leaving, staff will see you off at the entrance, highlighting the polite customer service common to the entire Zagin group.
