Overview
This is the first permanent store outside Aomori Prefecture by Chuka Soba Hirakoya, a popular shop from Tsugaru, Aomori (founded in Aomori City in 2005), located in "Tokyo Ramen Street" at Tokyo Station Ichibangai. Its signature dish features a rich Tsugaru niboshi (dried sardine) soup, prepared with a three-stage brewing process, where the umami, bitterness, and aroma of niboshi are layered in multiple dimensions, with the richness of animal-based broth adding depth. You can choose from "Koikuchi Niboshi" (rich niboshi), "Assari Niboshi" (light niboshi), "Nihachiboshi" (a 2:8 blend of both), or spicy niboshi soba, among others. The noodles are medium-thick, hand-kneaded straight noodles with a low-water content and a pleasant chewy texture. Three types of chashu, musubi menma (knotted bamboo shoots), and rich, perfectly ripe eggs are also popular. You can customize the flavor with Togarasu (chili vinegar) and Nibo Ichimi (niboshi chili powder) available on the table. This is authentic Tsugaru ramen, perfect for niboshi lovers, available at Tokyo Station.

1Before entering the store
Located within "Tokyo Ramen Street" in Tokyo Station Ichibangai, a 2-minute walk from Tokyo Station. Open from 10:30 AM to 10:30 PM. The store has a pleasant aroma of niboshi. On weekday lunchtimes, there might be a wait of about 10 minutes, and on holiday lunchtimes, up to 30 minutes, but waits are generally shorter on weekday evenings or around 3 PM.
2Purchasing meal tickets and ordering
Purchase meal tickets from the vending machine near the entrance. The machine has photos and supports English. After purchasing tickets, you are asked to re-queue at a designated spot opposite the store, so after buying, follow the surrounding signs or other customers to join the line. Payment is accepted via cash and transportation IC cards (such as Suica); credit cards and QR code payments are not accepted.
3Seating and receiving your order
There are 18 counter seats and table seating. Orders are served in about 5 minutes.
4Other
The signature dish is the rich "Koikuchi Niboshi". Submerging the chashu in the soup to warm it enhances the sweetness of the fat. You can change the flavor with Togarasu (chili vinegar) and Nibo Ichimi (niboshi chili powder) on the table. Another popular way to enjoy it is to put unlimited chashu on rice and turn it into niboshi zosui (rice porridge).
