1Before Entering

A specialty shop for seafood-tonkotsu tsukemen located along the main street in Fushimi Ward, a 2-3 minute walk from Chushojima Station on the Keihan Main Line. It is a famous tsukemen restaurant representing Kyoto, selected as a Tabelog Hyakumeiten (Top 100 Restaurants) for five consecutive years. Parking is available for 4 cars next to the shop. Business hours are mainly centered around lunch and dinner, operating almost continuously. On weekdays at 11:30 AM, there are about 4 people waiting outside for about 15 minutes. On Friday weekdays at 12:45 PM, there are about 4 people waiting outside for about 15 minutes. On Saturdays after 12:00 PM, there are about 7 people waiting outside for about 15 minutes. During peak hours on holidays, the wait can reach a peak of about 40 minutes with 18 people waiting outside.

2Purchasing Meal Tickets

There is a ticket vending machine at the shop entrance, and the system is to purchase meal tickets first before taking a seat. Staff guide customers to purchase tickets while they are waiting in line, so it is customary to buy tickets before joining the queue. Signature items include Seafood-Tonkotsu Tsukemen Regular 1050-1100 yen, Large (omori (large size)) 1200 yen (470g cooked noodles), Spicy Tsukemen, Shrimp Tsukemen, Shio Ton Ramen Regular 1000 yen, Chashu Men, Premium Topping 350 yen, Shime Kirari Meshi, and Curry Tsukemen. Noodle portions are displayed on the vending machine buttons, and large portions (omori (large size)) and additional noodles are possible. Payment at the vending machine is cash only.

3Seating and Receiving

The compact shop has only 11 L-shaped counter seats, and staff will guide you to an empty seat. Your order will be served in about 5 minutes. Some seats have a microwave oven next to them, a thoughtful service that allows you to reheat your dipping soup.

4Other

The signature Seafood-Tonkotsu Tsukemen combines homemade extra-thick, chewy noodles with a rich seafood-tonkotsu dipping soup. The noodles have a smooth surface and spread a sweet wheat flavor when chewed, so it is recommended to eat them plain first. The dipping soup has an exquisite balance of seafood and tonkotsu, rich but not too heavy, with a subtle seafood aroma that leaves a clean aftertaste. Standard toppings include one sheet of nori, thick menma, and half a seasoned egg, plus generous chunks of diced chashu and onion in the dipping soup. The Premium Topping (350 yen) features moist and tender rare chashu, an additional item that lets you directly enjoy the umami of the meat. Table condiments for flavor change include sudachi vinegar, chili vinegar, and vinegar garlic, which, when added towards the end, loosen the viscosity and create a refreshing aftertaste. For the finish, a soup wari (soup diluted with broth) is customary, transforming the rich dipping soup into a gentler flavor. "Shime Kirari Meshi" (finishing rice) is a popular side dish also offered as a bonus in half-portions, meant to be "dived" into the dipping soup. Shio Ton Ramen is a ramen with an espuma-style broth where the umami of seafood and tonkotsu stands out, allowing you to enjoy a highly complete dish even outside of tsukemen.
